Vegan Bangers & Mash with Miso Mushroom Gravy

↓ Jump to Recipe

There are few dinners more comforting than a big plate of vegan bangers and mash covered in gravy. This version keeps the classic combination of sausages and mashed potatoes but gives the gravy a deeply savory upgrade with miso and mushrooms.

I'm using Juicy Marbles sausages, which I've been loving for plant-based recipes. They get a quick sear on all sides until beautifully browned, giving them that satisfying crispy exterior while keeping the inside juicy and tender.

For the mash, I keep the potato skins on. I love the texture this gives the potatoes—it feels rustic, homemade, and a little more substantial. A splash of unsweetened plant milk, vegan butter, and simple seasonings are all you need.

Then there's the gravy.

Mushrooms are sautéed until deeply browned, then flour is added to create a simple roux. Vegetable stock and plant milk create the creamy base, while white or yellow miso adds a layer of savory umami that makes the gravy taste much more complex than the short ingredient list suggests.

The finished plate is hearty, creamy, savory, and exactly what you want on a cozy night.

Why You'll Love This Recipe

  • Classic bangers and mash made vegan
  • Juicy Marbles sausages get a beautiful sear
  • Rustic skin-on mashed potatoes
  • Rich mushroom miso gravy
  • Naturally dairy-free
  • Deep savory umami flavor
  • Easy enough for a weeknight
  • Great for a cozy Sunday dinner

Key Ingredients

Juicy Marbles Sausages

These provide the hearty, savory centerpiece. A quick sear on every side creates the best texture and adds caramelized flavor.

Potatoes

I prefer Yukon Gold potatoes for their naturally buttery texture, but russets or red potatoes work too. Keeping the peel on makes the mash rustic and textured.

Miso

Miso is the secret weapon in this gravy. It adds salty, fermented, savory depth without needing meat or dairy.

Mushrooms

Mushrooms reinforce the umami flavor from the miso and add a meaty texture to the gravy.

Plant Milk

Unsweetened oat or soy milk creates a creamy gravy without dairy.

Vegetable Stock

Stock gives the gravy its savory backbone.

Flour

A little flour creates the roux that thickens the gravy.

How to Make Vegan Bangers & Mash

Step 1: Cook the Potatoes

Scrub the potatoes thoroughly, leaving the skins intact.

Cut them into evenly sized chunks and place them in a pot. Cover with cold, generously salted water.

Bring to a boil and cook until completely fork-tender, about 15–20 minutes.

Drain well and return the potatoes to the warm pot.

Kitchen Technique: Starting potatoes in cold water helps the centers cook at the same rate as the outside.

Step 2: Make the Skin-On Mash

Add the warmed plant milk, vegan butter or olive oil, garlic powder, onion powder, salt, and pepper.

Mash until creamy but still rustic.

You should still see pieces of potato skin throughout.

Fold in fresh parsley.

Don't overwork the potatoes. Excessive mixing can make them gluey.

Step 3: Sear the Bangers

Heat olive oil in a large skillet over medium-high heat.

Add the Juicy Marbles sausages and season lightly with garlic powder, smoked paprika, and black pepper.

Sear on all sides until deeply golden brown.

Give each side enough time against the hot skillet to develop a crust rather than constantly moving the sausages around.

Remove and set aside.

Step 4: Brown the Mushrooms

Using the same skillet, add the mushrooms.

Cook over medium-high heat until their moisture has evaporated and the mushrooms become deeply golden.

Add the diced onion and cook until softened.

Add the garlic and cook for another 30–60 seconds.

Kitchen Technique: Browning the mushrooms properly is important. Don't rush this step—the caramelization creates the foundation of the gravy.

Step 5: Make the Roux

Reduce the heat to medium.

Add the vegan butter or olive oil if the pan is dry.

Sprinkle the flour over the mushrooms and stir continuously for 1–2 minutes.

The flour should coat the mushrooms and become lightly golden.

Slowly pour in the vegetable stock while stirring.

Add the plant milk and continue stirring until smooth.

Step 6: Add the Miso

In a small bowl, whisk the miso with a few tablespoons of the warm gravy until smooth.

Pour the mixture back into the skillet.

Add the soy sauce, thyme, garlic powder, onion powder, and black pepper.

Simmer for 3–5 minutes until thick and glossy.

Important: Taste before adding additional salt. Miso and soy sauce are both salty, so you may not need much additional seasoning.

Step 7: Assemble

Spoon the rustic mashed potatoes onto each plate.

Place the seared vegan sausages alongside the mash.

Pour the miso mushroom gravy generously over the sausages and potatoes.

Finish with fresh parsley and freshly cracked black pepper.

Serve immediately.

Why Miso Makes the Gravy So Good

Miso brings something special to a vegan gravy: umami.

Traditional meat-based gravies get much of their depth from browned meat juices and stock. In this version, the combination of:

deeply browned mushrooms + miso + vegetable stock + soy sauce

creates that same kind of savory complexity without animal products.

The key is not to overpower the gravy with miso. You want it to provide background depth rather than taste like a bowl of miso soup.

Best Miso for Gravy

White miso is my favorite for this recipe because it's mild, slightly sweet, and creamy.

Yellow miso also works beautifully.

Red miso can be used if you want a much stronger, more intensely fermented flavor. If using red miso, start with less and add more to taste.

Expert Tips

Brown the Mushrooms Properly

Let the mushrooms cook until their water evaporates and they develop golden edges.

Don't Boil the Miso Aggressively

Add the miso toward the end and keep the gravy at a gentle simmer.

Taste Before Salting

Miso and soy sauce both contribute salt, so taste the gravy before adding more.

Keep the Mash Rustic

The potato skins are part of the appeal. Don't worry about making perfectly smooth mashed potatoes.

Sear the Sausages Last

If possible, keep the sausages warm while finishing the gravy so you can serve everything immediately.

Variations

Onion Miso Gravy

Use two large onions instead of mushrooms and slowly caramelize them before making the roux.

Extra Mushroom Miso Gravy

Use cremini, shiitake, oyster, and maitake mushrooms together.

Mustard Miso Gravy

Add 1–2 teaspoons Dijon mustard to the finished gravy for a sharp, tangy note.

Herby Miso Gravy

Add fresh thyme, rosemary, sage, and parsley.

Garlic Mash

Add roasted garlic to the potatoes for an extra layer of flavor.

Frequently Asked Questions

Is miso gravy vegan?

Yes, as long as you use a vegan miso and vegetable stock. Miso itself is generally plant-based, but it's always worth checking the label of prepared products.

What does miso add to gravy?

Miso adds fermented, savory umami and helps create a deeper flavor that makes a vegan gravy taste rich and satisfying.

Can I use red miso?

Yes. Red miso is more intense and salty, so start with about 1 teaspoon and increase as needed.

Can I make this gluten-free?

Yes. Use gluten-free vegan sausages, gluten-free flour, and tamari.

Can I leave the potato skins on?

Absolutely. Scrub the potatoes well and remove any damaged areas. The skins add texture and make the mash more rustic.

Can the gravy be made ahead?

Yes. Make it up to 3 days ahead and refrigerate. Reheat gently and add a splash of vegetable stock or plant milk if it becomes too thick.

What to Serve with Vegan Bangers & Mash

Keep the meal classic with:

  • Steamed peas
  • Roasted carrots
  • Sautéed cabbage
  • Green beans
  • Braised greens
  • Roasted Brussels sprouts
  • Pickled onions
  • Crusty sourdough

A pile of peas alongside the mash gives you that classic British comfort-food feeling.

Final Thoughts

This Vegan Bangers & Mash with Miso Mushroom Gravy takes a classic comfort meal and gives it a deeply savory plant-based makeover.

The seared Juicy Marbles sausages bring the hearty centerpiece, the skin-on mashed potatoes provide that rustic, creamy base, and the mushroom gravy ties everything together. But it's the miso that gives the gravy its special something—deep, fermented umami that makes every spoonful taste incredibly satisfying.

Pile the mash high, add a couple of beautifully browned bangers, and absolutely drown the whole thing in miso mushroom gravy. Finish with parsley and black pepper, and you've got a cozy vegan dinner that feels both familiar and completely its own.
