  • vegan sausage
  • onion, diced
  • A-1 Steak sauce
  • cloves of garlic, minced
  • red bell pepper, diced
  • can of chopped tomatoes
  • can of lentils 
  • tablespoons tomato paste
  • cup vegetable broth
  • seasonings
  • teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil for cooking
Ingredients for Quick Vegan Sausage & Dumpling Veggie Casserole Recipe

Steps:

1. Make dumplings, by cooking potatoes and mashing them with a little flour, seasonings and salt & pepper. 

2. In a large oven-safe skillet or casserole dish, heat some olive oil over medium heat. Add the vegan sausages and cook until browned on all sides. Remove the sausages from the skillet and set aside.

3. In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

4. Add diced bell pepper to the skillet. Cook for a few minutes until the vegetables start to soften and golden brown. Deglaze with red wine (optional).

5. Stir in the tin lentils or beans, tomato paste, steak sauce, vegetable broth, dried thyme, dried rosemary, salt, and pepper. Mix well to combine all the flavors.

6. Return the vegan sausages to the skillet, nestling them into the vegetable mixture, alongside balled mashed potatoes. 

7. Cover the skillet or casserole dish with a lid or aluminum foil and transfer it to the preheated oven.

8. Bake for 30-40 minutes or until the sausages are cooked through and the vegetables are tender.

9. Remove from the oven and let it cool slightly before serving.
