Creamy High-Protein Vegan Couscous Risotto with Crispy Mushrooms & Pesto

↓ Jump to Recipe

This is one of my favorite ways to eat lately: a bowl of creamy, cheesy vegan couscous risotto made with Boostcous, piled with golden seared Smallhold mushrooms and finished with a drizzle of pesto. I always have a jar of homemade pesto in the fridge, and this is exactly the kind of dish it was made for.

The trick is that I don't drain or rinse the couscous. I let it cook in the broth and release its starch, then stir in miso, Better Than Bouillon, nutritional yeast and vegan cheese until it turns velvety. It tastes like a slow risotto but comes together in about 25 minutes.

Quick answer: To make vegan couscous risotto, toast high-protein couscous (I use Boostcous) with garlic, then simmer it in Better Than Bouillon broth, stirring often so the starch turns the liquid creamy. Off the heat, stir in white miso, nutritional yeast and vegan cheese. Top with seared Smallhold mushrooms and a drizzle of pesto. It is vegan, gluten-free and ready in about 25 minutes.

Vegan Couscous Risotto at a Glance

  • Time: about 25 minutes
  • Serves: 2
  • Diet: vegan, gluten-free, high-protein
  • Base: Boostcous, a couscous made from chickpea, lentil and pea flour
  • Key technique: keep the starch and stir it creamy, no draining or rinsing
  • Finish: seared mushrooms and pesto

The Formula: Creamy Base + Seared Produce + Pesto

This dish is really a formula you can use all week. Once you know the three layers, you can swap almost anything in and out.

  • 1. A creamy, cheesy base. Boostcous cooked risotto-style and finished with miso, Better Than Bouillon, nutritional yeast and vegan cheese.
  • 2. Seared produce on top. Mushrooms, cabbage, zucchini, cauliflower or anything that gets golden in a hot pan.
  • 3. A bright finish. A drizzle of pesto adds herbs, garlic and freshness that cut through the richness. This is my favorite part of the dish.

Why This Recipe Works

Legume-based couscous releases plenty of starch, so it thickens the broth on its own. Miso and Better Than Bouillon add deep, savory umami, while nutritional yeast and vegan cheese make it taste cheesy without any dairy. The seared mushrooms bring a meaty, crispy contrast, and the pesto keeps every bite from feeling heavy.

Ingredients You'll Need

  • Boostcous: a high-protein, gluten-free couscous. Any couscous works, see the substitutions below.
  • Better Than Bouillon: the vegetable or no-chicken base makes a rich broth in seconds.
  • White miso: adds savory depth and a little natural creaminess.
  • Nutritional yeast and vegan cheese: the cheesy part.
  • Smallhold mushrooms: oyster or lion's mane are my favorites for searing.
  • Pesto: homemade or a store-bought vegan pesto.

Tips for Perfectly Seared Mushrooms

  • Get the pan really hot before the mushrooms go in.
  • Tear them into large pieces and spread them in a single layer. Crowding makes them steam.
  • Press them down with a spatula and leave them alone for 3 to 4 minutes.
  • Salt them at the end so they stay crisp instead of releasing water.

Variations

Change the base

  • Use pearl couscous, orzo or arborio rice for a classic risotto texture.
  • Stir in a spoonful of white bean purée or cashew cream for an even creamier base.
  • Add lemon zest and black pepper for a cacio e pepe style version.

Change the seared produce

  • Seared cabbage wedges, like in my creamy Boost couscous with braised cabbage.
  • Charred zucchini, cherry tomatoes or broccolini.
  • King trumpet "scallops" or crispy tofu for extra protein.

Change the finish

  • Swap pesto for chimichurri, salsa verde or chili crisp.
  • Add toasted pine nuts, walnuts or breadcrumbs for crunch.
  • Finish with fresh basil, lemon juice or a drizzle of good olive oil.

Substitutions

  • Boostcous: pearl couscous, regular couscous, orzo, quinoa or arborio rice. Adjust the liquid and time.
  • Better Than Bouillon: any vegetable broth or bouillon cube.
  • Miso: a teaspoon of soy sauce or tamari, though miso gives the best creaminess.
  • Vegan cheese: leave it out and add an extra tablespoon of nutritional yeast.
  • Smallhold mushrooms: any oyster, cremini, shiitake or king trumpet mushrooms.
  • Pesto: try my cashew basil pesto or any vegan pesto.

Storage and Reheating

Keep leftover risotto and mushrooms in separate airtight containers in the fridge for up to 3 days. The risotto thickens as it cools, so reheat it on the stove with a splash of hot water or broth, stirring until creamy again. Re-crisp the mushrooms in a hot pan, then add fresh pesto just before serving.

Ingredients

Cheesy Boostcous Risotto

  • 1 cup Boostcous high-protein couscous
  • 1 tablespoon olive oil or vegan butter
  • 2 cloves garlic minced
  • 2½ cups hot water plus more as needed
  • 1 tablespoon Better Than Bouillon vegetable or no-chicken base
  • 1 tablespoon white miso paste
  • 3 tablespoons nutritional yeast
  • ¼ cup shredded vegan cheese mozzarella or parmesan style
  • black pepper and red pepper flakes to taste

Seared Mushrooms

  • 8 oz Smallhold mushrooms oyster, lion's mane or a mix, torn into large pieces
  • 1 tablespoon high-heat oil such as avocado oil
  • flaky salt to taste

To Finish

  • 2 to 3 tablespoons pesto homemade or store-bought vegan
  • lemon wedge optional

Instructions

  • Whisk the Better Than Bouillon into the hot water to make a quick broth. Keep it warm.
  • Heat the high-heat oil in a skillet over medium-high heat until it shimmers. Add the mushrooms in a single layer, press them down with a spatula, and leave them alone for 3 to 4 minutes until deeply golden. Flip and sear 2 to 3 minutes more. Season with flaky salt and set aside.
  • In a saucepan over medium heat, warm the olive oil or vegan butter. Add the garlic and cook for 30 seconds, until fragrant.
  • Add the Boostcous and toast for 1 minute, stirring.
  • Pour in about 2 cups of the hot broth. Simmer, stirring often, and add more broth a splash at a time until the couscous is tender and the starch turns the liquid thick and creamy. Check the package for timing. Do not rinse it: the starch is what makes it velvety.
  • Loosen the miso with a splash of broth, then stir it in off the heat along with the nutritional yeast and vegan cheese. Season with black pepper and red pepper flakes. Add more broth until it is loose enough to slowly spread on the plate.
  • Spoon the risotto into bowls, pile the seared mushrooms on top, and finish with a generous drizzle of pesto and a squeeze of lemon.

Notes

Miso and Better Than Bouillon are both salty, so taste before adding any extra salt. The risotto thickens as it sits, so loosen leftovers with a splash of hot water or broth when reheating.

Vegan Couscous Risotto FAQ

What is Boostcous?

Boostcous is a high-protein, gluten-free couscous made from chickpea, lentil and pea flour. It cooks like regular couscous but has a sturdier bite and far more protein and fiber than wheat couscous.

Can you make risotto with couscous?

Yes. Cook the couscous in broth and stir it often instead of draining or rinsing it. The released starch thickens the liquid, and stirring in miso, nutritional yeast and vegan cheese turns it creamy, just like a classic risotto.

How do I make couscous risotto creamy without dairy?

Keep the starch, then stir in white miso, nutritional yeast and a little shredded vegan cheese off the heat. Add hot broth a splash at a time until it is loose and spoonable.

Is this recipe gluten-free?

Yes, as long as your Boostcous, bouillon, miso and pesto are certified gluten-free. Always check the labels.

Is this recipe high in protein?

Yes. The base is a legume-based couscous made from chickpea, lentil and pea flour, so it carries much more protein than a rice or wheat risotto. Check your package for exact numbers.

What mushrooms are best for searing?

Oyster, lion's mane, king trumpet and maitake all sear beautifully because they hold their shape and get crispy edges. Smallhold sells all of these fresh.

How do I get mushrooms golden instead of soggy?

Use a hot pan, give them room in a single layer, press them down and do not move them for 3 to 4 minutes. Salt them at the end so they do not release water too early.

Is pesto vegan?

Traditional pesto contains Parmesan, so it is not vegan. Use homemade pesto made with nutritional yeast or nuts instead of cheese, or a store-bought pesto labeled vegan.

Can I make this ahead?

You can sear the mushrooms ahead, but the risotto is best fresh. It thickens as it sits, so loosen leftovers with hot water or broth when reheating.

What can I use instead of Boostcous?

Pearl couscous, regular couscous, orzo, arborio rice or quinoa all work. Adjust the liquid and cooking time to match the package.
