Shroomy Beans with Oyster & King Trumpet Mushrooms (Lemony Bean & Chickpea Skillet)

Shroomy beans are my go-to "I have nothing in the fridge" dinner, and honestly, I cook them all the time. This version uses oyster and king trumpet mushrooms, which get crispy, golden edges and a meaty, almost scallop-like bite. Add garlicky aromatics, a spoonful of umami-packed paste like miso or tomato paste, and a couple of cans of beans and chickpeas, simmered right in their own liquid until saucy and rich. A squeeze of lemon at the end makes it all sing, and the whole thing gets piled onto thick slices of toasty bread.

What are shroomy beans with oyster mushrooms?

Quick answer: Shroomy beans are a one-pan vegan dish of sautéed mushrooms (here, oyster and king trumpet) and canned beans simmered with aromatics, spices, and an umami paste like miso, tomato paste, or Better Than Bouillon. The canned bean liquid turns into a silky, savory sauce, and a squeeze of lemon brightens it at the end. It takes about 35 minutes, serves 4, and is served on thick slices of toasted bread for scooping up all the sauce.

The shroomy beans formula

This isn't a strict recipe. It's a formula you can cook from memory. Pick one or more from each category:

  • Mushrooms (or any produce): cremini, shiitake, oyster, king trumpet, or a mix. Bell peppers, zucchini, kale, or spinach work too.
  • Aromatics: onion, shallot, garlic, leek, or ginger.
  • Spices: smoked paprika, cumin, thyme, oregano, chili flakes, or black pepper.
  • Tasty pastes: white miso, tomato paste, Better Than Bouillon, harissa, or gochujang.
  • Canned legumes (with their liquid): butter beans, cannellini, chickpeas, black beans, or lentils.
  • Acid: fresh lemon juice and zest, or a splash of vinegar.
  • Something toasty: crusty bread, sourdough, or a baguette, toasted and rubbed with garlic.

Key ingredients

Oyster and king trumpet mushrooms

Oyster mushrooms are delicate and frilly. Tear them into bite-size clusters by hand, and their thin edges crisp up beautifully in a hot pan. King trumpet mushrooms (also called king oyster) have thick, firm stems with a meaty, chewy bite. Slice them into ½-inch coins or tear them lengthwise into strips. Together they give you crispy and meaty in one pan. Use about 1 pound total, roughly half and half. Can't find them? Cremini or shiitake work great.

Aromatics

An onion and plenty of garlic build the flavor base. Shallots or leeks are lovely swaps.

Umami pastes

This is where the "how is this so good?" comes from. White miso adds salty, funky depth, tomato paste brings sweetness and color, and Better Than Bouillon adds rich, brothy savoriness. Use one, two, or all three. For a vegan version, choose a plant-based bouillon such as Better Than Bouillon's Vegetable, No Chicken, or Mushroom bases, since some of their varieties contain meat.

Canned beans and chickpeas

I use one can of white beans (butter beans or cannellini) and one can of chickpeas, and I pour them in with their liquid. That starchy liquid (also called aquafaba) thickens into a creamy, glossy sauce with zero cream. If your cans are very salty, use low-sodium beans or drain and rinse one of them.

Lemon

Fresh lemon zest and juice stirred in at the end cut through the richness and make every flavor taste brighter.

Toasty bread

This is how I serve it: thick slices of sourdough or crusty bread, toasted until golden and rubbed with a cut garlic clove. The crunchy toast soaks up the savory bean sauce like a dream. Prefer a grain? Our original version is served over quinoa (see Variations below).

How to make shroomy beans, step by step

Step 1: Sauté the aromatics

Heat the olive oil in a large skillet over medium heat. Add the diced onion and a pinch of salt and cook for 4 to 5 minutes until soft and translucent. Add the garlic and cook for 1 minute until fragrant.

Step 2: Brown the oyster and king trumpet mushrooms

Turn the heat to medium-high and add the king trumpet coins first, since they're denser, then the torn oyster mushrooms. Spread them out and let them sit for a few minutes before stirring so they brown instead of steam. Cook 6 to 8 minutes until golden and crispy at the edges. Work in batches or add an extra drizzle of oil if your pan is crowded.

Step 3: Season with spices

Sprinkle in the smoked paprika, cumin, thyme, black pepper, and chili flakes. Stir for about 30 seconds until fragrant.

Step 4: Add the pastes

Push everything to the side, add the tomato paste, miso, and bouillon to the open spot, and let them sizzle for 1 minute. Then stir them into the mushrooms until everything is coated and deeply colored.

Step 5: Add the beans and chickpeas with their liquid

Pour in both cans, liquid and all. Bring to a simmer and cook 8 to 10 minutes, stirring occasionally, until the sauce thickens. Mash a few beans against the side of the pan to make it extra creamy. Add a splash of water if it gets too thick.

Step 6: Finish with lemon

Turn off the heat and stir in the lemon zest and juice. Taste and adjust the salt. Between the bouillon, miso, and canned beans, you may not need much.

Step 7: Serve

Toast thick slices of bread, rub them with a cut garlic clove, and spoon the shroomy beans right over the top. Finish with fresh herbs and a drizzle of olive oil.

Variations

  • The original: sauté onion and bell peppers, deglaze the mushrooms with a splash of apple wine, use butter beans, stir in vegan cheese, and serve over quinoa. Get the full recipe in our original Shroomy Beans with Butter Beans & Quinoa.
  • Shredded king trumpet: shred the king trumpet stems with a fork into "pulled" strands for an even meatier texture.
  • Creamy: stir in a spoonful of vegan cream cheese, cashew cream, or coconut milk at the end.
  • Greens: fold in a few handfuls of spinach, kale, or chard until wilted.
  • Spicy: use harissa or gochujang as your paste, or finish with chili crisp.
  • Smoky: double the smoked paprika and add a pinch of chipotle powder.
  • Brothy: add 1 cup of water or broth and serve it like a stew with lots of bread for dunking.
  • Different beans: try black beans, pinto beans, or lentils.

Substitutions

  • Oyster or king trumpet mushrooms: cremini, shiitake, maitake, or any produce you have, like zucchini, peppers, eggplant, or cauliflower.
  • Miso: soy sauce or tamari (start with 1 tablespoon).
  • Better Than Bouillon: a vegan bouillon cube or ½ cup vegetable broth.
  • Tomato paste: harissa, gochujang, or sun-dried tomato paste.
  • Lemon: lime juice, red wine vinegar, or apple cider vinegar.
  • Canned beans: about 3 cups of home-cooked beans plus 1 cup of their cooking liquid.

What to serve with shroomy beans

Toasty bread is the move here: sourdough, ciabatta, a baguette, or any crusty loaf, toasted and rubbed with garlic. A crisp green salad on the side keeps it fresh. If you'd rather have a grain bowl, the original version is served over quinoa.

Storage and meal prep

Shroomy beans taste even better the next day. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat on the stove with a splash of water to loosen the sauce, then add a fresh squeeze of lemon. Toast the bread fresh when serving so it stays crunchy.

Ingredients
  

Aromatics + mushrooms

  • 2 tablespoon olive oil
  • 1 onion diced, or 2 shallots
  • 4 cloves garlic minced
  • 8 oz king trumpet mushrooms 225 g, sliced into ½-inch coins
  • 8 oz oyster mushrooms 225 g, torn into bite-size clusters

Spices (use what you like)

  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme or oregano
  • ¼ teaspoon chili flakes optional
  • black pepper to taste

Tasty pastes

  • 1 tablespoon tomato paste
  • 1 tablespoon white miso
  • 1 teaspoon Better Than Bouillon Vegetable, No Chicken, or Mushroom (vegan)

Legumes + finish

  • 1 can butter beans or cannellini 15 oz / 425 g, with liquid
  • 1 can chickpeas 15 oz / 425 g, with liquid
  • 1 lemon zest and juice
  • fresh parsley or cilantro optional, for garnish

To serve

  • 4 thick slices crusty bread or sourdough toasted and rubbed with a cut garlic clove

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Cook the onion with a pinch of salt for 4 to 5 minutes until soft. Add the garlic and cook 1 minute.
  • Increase heat to medium-high. Add the king trumpet coins, then the oyster mushrooms, in an even layer and let them brown before stirring. Cook 6 to 8 minutes until golden and the liquid has evaporated.
  • Add the spices and stir 30 seconds until fragrant.
  • Push the mushrooms aside, add the tomato paste, miso, and bouillon to the pan, and fry 1 minute. Stir everything together.
  • Pour in the beans and chickpeas with their liquid. Simmer 8 to 10 minutes, stirring and mashing a few beans, until thick and saucy. Add a splash of water if needed.
  • Turn off the heat. Stir in the lemon zest and juice, then taste and adjust salt and pepper.
  • Toast the bread, rub with a cut garlic clove, and spoon the shroomy beans over the top. Finish with fresh herbs and a drizzle of olive oil.

The formula: mushrooms (or any produce) + aromatics + spices + a tasty paste + canned legumes with their liquid + lemon + toasty bread. Swap freely.
Salt check: Miso, bouillon, and canned bean liquid are salty, so taste before adding more. Use low-sodium beans if you prefer.
Brown the mushrooms: Don't crowd or stir too often, or they'll steam.
Storage: Refrigerate up to 4 days or freeze up to 3 months. Brighten leftovers with fresh lemon.
