Late night Quinoa Rotini, Lots of Mozzarella & Chorizo, All Vegan

Easy hearty harmonious vegan pot!

This one is perfect if your short on time and ingredients. It’s so simple making it open to additions of your choice and a starting point for many possibilities.

Cook quinoa rotini in salted boiling water for 9 minutes, rinse and run in water to avoid overcooking. On a separate pan, sear nutcase vegan chorizo till golden brown. Throw in your vegan cheese and marinara. Stir judiciously and let flavors harmonize.

Finished with some lemon zest and flax oil for some omegas.
