Ingredients

Ingredients for Vegan Caramelized Onion Mushroom Gravy: olive oil, onions, mushrooms, sugar, soy sauce, oat milk, flour, salt, and pepper
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 8 ounces baby Bella fresh mushrooms, you can also use shiitake or crimini mushrooms sliced
  • 1 tablespoon sugar
  • 2 tablespoons soy sauce
  • 2 cups oat milk (or any plant-based milk of your choice)
  • 2 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • Fresh herbs, such as thyme or rosemary, for garnish (optional)

Instructions

Sautéing sliced onions with spices in olive oil until caramelized

Start the caramelization process by sautéing Onions in medium-high heat, season it up with spices you may have on hand, I used mushroom umami powder and pink salt.

Adding sliced mushrooms to the caramelized onions to enhance flavor

Throw in sliced mushrooms. Let it reduce and make that mushroom juice really flavorful.

Stirring in plant-based milk and flour into the mushroom mixture

Throw in plant milk and or stock, 2 tablespoon of flour. Stir thoroughly. Season with soy sauce and more herbs if you please.

Seasoning the gravy with soy sauce and adjusting its consistency

Adjust consistency and flavor.

  1. Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
  2. Once the onions are caramelized, add the sliced mushrooms to the hot pan. Give it a little bit of time. Cook until they are soft and golden brown, about 5-10 minutes.
  3. Sprinkle sugar over the onions and mushrooms, stirring to combine. This will help deepen the caramelization and add a hint of sweetness to the creamy gravy. Scrape the browned bits at the bottom of the pan.
  4. Stir in the soy sauce, allowing it to coat the onions and mushrooms evenly.
