Instructions

  1. Start by pressing the block of tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top. Let it sit for about 10-15 minutes.
  2. While the tofu is pressing, prepare the stuffing mixture. In a food processor, combine the vegan parmesan, vegan mozzarella, olive oil, mushroom powder, garlic powder, flour, and soy sauce. Pulse until everything is well combined and forms a thick, cheesy mixture.
  3. Once the tofu has been pressed, slice it into ½-inch thick patties. Using a spoon or your fingers, carefully hollow out the center of each patty to create a small pocket for the cheese stuffing.
  4. Spoon a generous amount of the cheese mixture (vegan parmesan cheese & vegan mozzarella) into the center of each tofu patty, then press the edges together to seal in the filling.
  5. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Carefully place the stuffed tofu patties in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
