Ingredients

  • 1 can (15 oz) garbanzo beans (chickpeas), drained and rinsed
  • 1 flax egg OPTIONAL (1 tablespoon ground flax seeds + 2.5 tablespoon water)
  • ½ red onion, finely chopped
  • 2 cloves garlic or 1 teaspoon garlic powder
  • ¼ cup chickpea flour or all-purpose flour
  • 1 teaspoon cumin
  • ½ teaspoon curry powder (optional)
  • 2 tablespoon fresh parsley or cilantro, finely chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste
  • 1-2 tablespoon olive oil, for frying
  • 3 tbsp Bread crumbs for coating


Steps

  1. Prepare the Chickpea Mixture
    • Combine garbanzo beans, red onion, garlic, and spices in a food processor. Pulse until roughly mashed but not smooth.
  2. Mix Ingredients
    • Transfer to a large bowl. Add flax egg, chickpea flour, parsley, and lemon juice. Mix thoroughly. Adjust seasonings as needed.
  3. Form Patties
    • Use a potato masher or hands to form patties from the mixture. Place on parchment paper for easy handling. Coat with bread crumbs.
  4. Cook the Patties
    • Heat a frying pan or large skillet with olive oil over medium heat. Cook patties for 3-4 minutes per side or until golden brown.
  5. Serve & Enjoy
    • Serve warm with your favorite toppings, spicy tahini, or vegan mayo. I made a quick thousand island dressing using relish, vegan mayo and ketchup.
