How to make

- 1 medium-sized squash, peeled and diced

- 1 onion, finely chopped

- 2 tomatoes, diced

- 1-inch piece of ginger, grated

- 1 can of coconut milk

- Salt and pepper to taste

Ingredients
  

  • 1 onion
  • 2 Big tomatoes
  • 2 butternut squash
  • 1 Can coconut milk
  • 5 tablespoon olive oil
  • 2 Pieces smashed ginger

Instructions
 

  • Give all the produce a rough chop! The butternut squash, the tomatoes, the onions. Perl and smash two pieces of big ginger.
  • Put em all in a pot, add stock or water, your choice of seasonings and herb. Keep it minimal for we want the natural sweetness and creamy ness of the squash to come through. Add the coconut milk as well.
  • Put lid on. Bring to a boil then simmer for 20/30 minutes. Serve with rice or bread, or enjoy on it's own!
