Beyond Sausage is a plant-based sausage link that sears up juicy and golden with a savory, smoky bite. Slice it into coins so you get lots of crispy edges. Any vegan sausage works, including Field Roast or Impossible.
Carrots and onions
Sautéed until soft and lightly caramelized, they add natural sweetness that balances the heat.
Sriracha mayo
Vegan mayo whisked with Mr. Bing Sriracha makes a creamy, garlicky, gently tangy sauce with a kick. Mr. Bing's sriracha is made from chili peppers, garlic, sugar, salt, and vinegar, so it's vegan.
Chili garlic crisp
A spoonful of Mr. Bing Chili Crisp brings crunch, toasty garlic, and a little Sichuan tingle. It's made with chili, onions, garlic, mushroom powder, and Sichuan peppercorn, and contains no animal products. It comes in mild and spicy.
Lemon, dill, and cilantro
The finishing touch. Lemon juice cuts through the creamy sauce, and the dill and cilantro add a fresh, herby lift you don't expect.
How to make spicy Beyond Sausage pasta
- Cook the pasta. Boil the Brami fusilli in well-salted water until al dente, about 10 minutes (check your box). Reserve ½ cup of pasta water, then drain.
- Sauté the carrots and onions. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the carrots and onion with a pinch of salt and cook 6 to 8 minutes until soft and lightly golden.
- Sear the sausage. Push the veggies to the side, add the sliced Beyond Sausage, and sear 3 to 4 minutes, flipping once, until browned on both sides.
- Season to taste. Add black pepper, garlic powder, and a pinch of smoked paprika if you like. Taste and adjust the salt.
- Make the sriracha mayo. In a small bowl, whisk the vegan mayo, sriracha, and chili garlic crisp.
- Toss it all together. Add the pasta to the skillet with a splash of pasta water and toss. Turn off the heat, then stir in the sriracha mayo until everything is creamy and coated. Add more pasta water if it looks thick.
- Finish and serve. Squeeze in the lemon juice, shower with chopped dill and cilantro, and add an extra spoonful of chili crisp on top.
Tips for the best sriracha mayo pasta
- Add the mayo off the heat. High heat can make mayo split or turn greasy. Stir it in after you turn off the burner.
- Save pasta water. A splash loosens the sauce and helps it cling to every spiral.
- Slice the sausage into coins. More surface area means more crispy, caramelized edges.
- Control the heat. Start with less sriracha and chili crisp, taste, then add more. Mr. Bing's mild chili crisp is great for spice-shy eaters.
- Don't skip the herbs. Dill and cilantro make it taste fresh instead of heavy.
