Vegan Cauliflower Chickpea Soup (Alison Roman Stew Inspired)

↓ Jump to Recipe

Recipe at a Glance

Quick answer: This vegan cauliflower chickpea soup is a 40-minute, one-pot vegan dinner. Sear cauliflower until deeply golden, season it with smoked paprika and herbs, crisp chickpeas in the same pot, then simmer everything in coconut milk and miso. Melted vegan cheese and torn kale finish it into a creamy, savory, protein-rich bowl.

  • Time: 40 minutes (10 prep, 30 cook)
  • Serves: 4
  • Protein: about 19g per bowl
  • Pot: one Dutch oven

What Is Vegan Cauliflower Chickpea Soup?

It is a brothy, creamy, one-pot soup where seared cauliflower and crispy chickpeas do all the heavy lifting. The idea comes from Alison Roman's famous spiced chickpea stew with coconut milk, which taught a whole generation of home cooks to crisp their chickpeas before adding liquid. Here the cauliflower gets the same treatment: a hard sear in a hot pot builds a deep, nutty, almost roasted flavor that turns into the backbone of the broth. White miso and coconut milk bring savory richness, a handful of vegan cheese melts in for body, and kale wilts in at the very end.

Why You'll Love This Recipe

  • One pot, big flavor. Every step happens in the same Dutch oven, and every browned bit on the bottom becomes flavor in the broth.
  • Seared, then simmered. Searing the cauliflower first gives you the depth of a roasted vegetable soup in half the time.
  • Two textures of chickpea. Most stay creamy in the broth, and a reserved handful stays crunchy for the top.
  • High-protein comfort food. Chickpeas and miso make it a filling dinner, about 19g of protein per bowl.
  • Pantry friendly. Canned chickpeas, a can of coconut milk and a tub of miso turn one head of cauliflower into dinner for four.

The Cooking Formula: Sear + Crisp + Cream + Green

  1. Sear a sturdy vegetable hard for deep, roasted flavor (cauliflower).
  2. Crisp a protein in the same fat (chickpeas).
  3. Cream it all with fat plus umami (coconut milk + white miso + vegan cheese).
  4. Green at the finish for freshness and color (torn kale).

Swap any part of the formula and you have a new soup: broccoli or butternut squash for the sear, white beans for the crisp, spinach or chard for the green. This is the same build-a-meal thinking inside How to Eat Well on $50 a Week, our plant-based formula guide.

Key Ingredients for This Vegan Cauliflower Chickpea Soup

Cauliflower

One large head, cut into florets with a flat side. Flat sides make full contact with the pot and brown beautifully.

Chickpeas

Two cans, drained and patted dry. Dry chickpeas crisp faster and blister instead of steaming.

Smoked Paprika, Cumin and Thyme

Smoked paprika gives warmth and a gentle smokiness, cumin adds earthiness, and thyme keeps it herby. Blooming the spices in hot oil wakes them up.

White Miso

Also called shiro miso, a mild fermented soybean paste. It brings deep savory flavor and a little natural sweetness. Stir it in before the liquid so it dissolves evenly.

Coconut Milk

Full-fat canned coconut milk makes the broth silky and rich. Light coconut milk works for a thinner, brothier bowl.

Vegan Cheese

A half cup of shredded vegan mozzarella or cheddar melts into the broth for extra creaminess and a cozy, cheesy finish.

Kale

Lacinato (Tuscan) kale holds its shape best. Tear it into bite-size pieces and add it in the final few minutes so it stays bright green.

How to Make Vegan Cauliflower Chickpea Soup

  1. Sear the cauliflower. Heat 2 tablespoons olive oil in a Dutch oven over medium-high heat. Add the florets flat side down in a single layer (work in two batches for a smaller pot). Let them cook undisturbed for 5 to 6 minutes until deep golden, then toss and cook 3 to 4 minutes more.
  2. Season. Lower the heat to medium. Add the smoked paprika, cumin, thyme, garlic powder, red pepper flakes, salt and pepper. Stir for 30 seconds until fragrant and the cauliflower is coated in the spices.
  3. Crisp the chickpeas. Push the cauliflower to one side, add the last tablespoon of oil and the dried chickpeas. Cook 5 to 7 minutes, stirring occasionally, until blistered and lightly crisp. Scoop out a small handful for topping.
  4. Bloom the miso. Add the miso with a splash of the water and stir until it coats everything in the pot.
  5. Simmer. Pour in the coconut milk and the rest of the water, scraping up all the browned bits. Bring to a gentle simmer and cook 10 minutes. For a thicker soup, lightly mash a few pieces of cauliflower against the side of the pot.
  6. Finish. Stir in the vegan cheese until melted, then add the torn kale and simmer 2 to 3 minutes until just wilted. Taste and adjust with salt and a squeeze of lemon.
  7. Serve. Ladle into bowls and top with the reserved crispy chickpeas, a pinch of red pepper flakes and fresh herbs. Crusty bread on the side is highly recommended.

Tips for the Best Results

  • Dry everything. Pat the cauliflower and chickpeas dry for a better sear and crispier chickpeas.
  • Give it time. Leave the cauliflower alone while it sears; the color is the flavor.
  • Add the miso early, the kale late. Miso dissolves best in the hot pot before the liquid, and kale stays vivid when it goes in at the end.
  • Finish with acid. A squeeze of lemon right before serving brightens the rich broth.

Easy Substitutions and Variations

  • Cheese: Swap vegan cheese for 2 tablespoons nutritional yeast for a lighter, cheesy flavor.
  • Greens: Use spinach, Swiss chard or bok choy in place of kale.
  • Heat: Add a spoonful of harissa or chili crisp with the spices.
  • Beans: Try butter beans or cannellini beans for an extra-creamy version.
  • Miso: Red or yellow miso gives a stronger, saltier flavor; start with 1 tablespoon.

What to Serve with Vegan Cauliflower Chickpea Soup

Serve it with toasted sourdough, garlic bread or warm flatbread for dunking. Steamed rice also turns it into a hearty stew-style bowl.

Storage and Meal Prep

Store leftovers in an airtight container in the fridge for up to 4 days. The soup thickens as it rests, so loosen it with a splash of water when reheating on the stove. Keep the crispy chickpea topping in a separate container so it stays crunchy.

Frequently Asked Questions

Can I use roasted cauliflower instead of seared?

Yes. Roast the florets at 425°F for 25 minutes with the oil and spices, then add them to the pot after crisping the chickpeas. Searing in the pot keeps it to one pan and saves time.

What kind of miso is best for this soup?

White miso (shiro miso) is the best choice. It is mild, slightly sweet and blends smoothly into coconut milk. Red or yellow miso also works; use a little less because it is saltier.

Is this vegan cauliflower chickpea soup gluten-free?

It is gluten-free when you use a miso and a vegan cheese labeled gluten-free. Many white misos are made only with soybeans and rice, so check the label.

How do I make the soup thicker?

Mash a few pieces of cauliflower and chickpeas against the side of the pot, or simmer uncovered for an extra 5 to 10 minutes. The soup also thickens as it cools.

Can I freeze this soup?

Yes. Freeze it for up to 3 months. For the best texture, freeze the soup before adding the kale, then stir fresh kale in when you reheat it.

How much protein is in a bowl?

Each of the 4 servings has about 19 grams of plant-based protein, mostly from the chickpeas and miso.
