This recipe starts with vegan sausages—or "bangers"—seared until deeply browned on the outside. I like to get plenty of color on them first because that quick sear adds so much flavor and gives the sausages a satisfying texture.

The bangers are then set aside while the vegetables become the foundation of the stew. Tomatoes, squash, and zucchini are sautéed with plenty of seasoning before miso and tomato paste are stirred in. Vegetable stock turns everything into a rich, savory broth, while beans make the dish hearty and filling.

At the very end, fresh spinach is stirred in and the browned vegan sausages are nestled right on top.

For a little crunch, finish the whole thing with toasted panko breadcrumbs, fresh spinach, herbs, and a drizzle of olive oil.

How to Make Vegan Bangers & Beans

Step 1: Sear the Bangers

Heat olive oil in a large skillet or Dutch oven over medium-high heat.

Add the vegan sausages and sear on all sides until deeply browned.

Don't rush this step. Rotate the sausages every few minutes so you get caramelized color all around.

Remove the bangers from the pan and set aside.

Kitchen Technique: Searing the sausages first builds flavor before the stew even begins. The browned bits left in the pan also become part of the flavor base.

Step 2: Sauté the Vegetables

In the same pan, add the onion and cook until softened.

Add the tomatoes, zucchini, and yellow squash.

Season with smoked paprika, garlic powder, onion powder, oregano, black pepper, and red pepper flakes if using.

Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften and develop some color.

Add the garlic and cook for another minute.

Tip: If your miso is very thick, whisk it with a splash of vegetable stock first. This makes it easier to distribute throughout the stew.

Step 4: Add the Beans & Stock

Add the beans and vegetable stock.

Stir everything together and bring the stew to a gentle simmer.

Cook for about 8–10 minutes, allowing the broth to reduce slightly and the vegetables to become tender.

Taste and adjust the seasoning.

You may not need much additional salt because the miso and vegan sausage can both be salty.

Step 5: Add the Spinach & Bangers

Fold the spinach into the stew.

Once it starts to wilt, nestle the seared vegan bangers on top.

Cover the pan and simmer for another 3–5 minutes, just until the sausages are heated through and the spinach is tender.

Turn off the heat.

Finish with fresh herbs, cracked black pepper, lemon juice, and olive oil.

Optional Crispy Panko Topping

For a crunchy finish, heat a small skillet over medium heat.

Add the panko, olive oil, garlic powder, and a pinch of salt.

Toast for 2–4 minutes, stirring frequently, until golden brown.

Sprinkle the crispy breadcrumbs over the finished bangers and beans.

Kitchen Technique: Keep an eye on panko. It can go from golden to burnt very quickly.

The Secret to Better Vegan Bangers & Beans

The key is building flavor in layers.

Don't throw everything into a pot at once.

First, brown the vegan sausages.

Then sauté the vegetables.
