Vegan Trader Joe’s Asian Stir Fry

If you are a Trader Joe’s shopper and on a vegan diet, this one is for you! Utilizing the convenience of frozen products, this recipe is so easy and flavorful you’d keep on having seconds!

This vegan meal is tasty because it combines the savory flavors of Impossible Chicken Nuggets with the fresh crunch of stir fry vegetables. The quick Asian sauce adds a tangy, sweet, and spicy kick, while the Trader Joe’s vegetable fried rice brings a hearty, satisfying base to the dish.

What you need

1 pack of Impossible Chicken Nuggets

1 bag of Trader Joe’s Stir Fry Vegetables

1 jar of Quick Asian Sauce (or make your own with soy sauce, ginger, garlic, and a bit of sugar)

1 bag of Trader Joe’s Vegetable Fried Rice

What you do

1. Cook the Impossible Chicken Nuggets according to the package instructions.

2. While the nuggets are cooking, heat a large pan or wok over medium heat. Add the stir fry vegetables and cook until they are tender.

3. Add the cooked nuggets to the pan with the vegetables. Pour the quick Asian sauce over the top and stir to combine.

4. Heat the Trader Joe’s Vegetable Fried Rice according to the package instructions. Serve the stir fry over the rice.

Variation

  • Different Proteins: Instead of Impossible Chicken Nuggets, you can use tofu, tempeh, or seitan. You could also use a different type of vegan nugget, like a breaded mushroom or cauliflower nugget.
