What is Tortang Talong?
Vegan tortang talong is a Filipino dish that is made with grilled eggplant (talong) that is dipped in a batter made from chickpea flour (besan) or vegan egg and then fried until golden brown. It is a vegan version of the traditional Filipino dish, which typically includes eggs in the batter. The eggplant is first grilled or roasted until the skin is charred and the flesh is soft, then peeled and flattened. The flattened eggplant is then dipped in the batter and fried until crispy. Vegan tortang talong is often served with a dipping sauce made from vinegar, soy sauce, and chili peppers. It is a popular dish in the Philippines and is often served as a main course or as a side dish.
What is Just Egg?

Variation
There are many ways to modify this, maybe add some bits and pieces of mushrooms on your batter, maybe some beyond meat. Peppers and onions would be a nice addition too. Feel free to dig inside your fridge and come up with something new. Try to sauté onions and bell peppers or extra boost of flavor. Using different type of eggplant will provide a different flavor too.
What you need
- Eggplant - Charring of the eggplant on an open flame creates a unique characteristic smoky flavor. Using Chinese eggplants and or any asian eggplants will do.
- Just Egg - It is my favorite vegan egg brand out in the market!
- Seasoning - Feel free to use garlic powder, mushroom powder, black pepper or pink Himalayan salt.
- Olive oil
What you do
- Roast whole Eggplants on stove top or grill on medium heat for around 3-4 minutes.
- Peel skin of the eggplants and take some of the seeds out. Flatten the peeled whole eggplant with the back of a fork
- In a bowl whisk some seasoning, I used garlic powder to Just Egg. Feel free to add some vegan oyster sauce to your egg batter.
- Dip flattened eggplant in prepared vegan egg mixture.
- Pan fry in a non stick frying pan with olive oil for 3-5 minutes in medium-high heat like a wide teardrop shape flat cake. Crisp up the outside of the omelette.
- Lay on serving plate with condiment of choice. I used Dijon and vegan Mayo on this one. If you want to make it authentically filipino, serve with side of rice and banana ketchup and some vegan fish sauce.

Ingredients
- 1 Pc eggplant
- 3 tablespoon olive oil
- ½ Cup just egg
- 1 teaspoon seasoning of choice
Instructions
- Grill eggplant on direct flame on a stovetop or grill.
- Peel skin off eggplant, remove seeds too if you please. Flatten.
- Season Just egg with seasoning on hand, maybe some garlic powder, salt & pepper or mushroom seasoning.
- Dip the flattened eggplant and sear on each side on a non stick pan with a little oil.
