Caramelized Cabbage Spaghetti with Preserved Lemon, Arugula & Crispy Panko

Humble cabbage becomes something magical in this caramelized cabbage spaghetti. Slowly cooked until it's jammy, golden, and sweet, the cabbage melts into the noodles like a sauce. Then it gets a bright jolt from preserved lemon, a handful of peppery arugula, and a crunchy, cheesy shower of nutritional yeast and toasted panko. Feeling adventurous? Spoon on some chili garlic. It's a cheap, cozy, flavor-packed vegan pasta that proves you don't need cream to make something craveable.

How do you make caramelized cabbage pasta?

  • Something sweet and savory: slow-caramelized cabbage, which turns nutty and almost buttery.
  • Something pickled: preserved lemon (or capers, pickled onions, or olives) to cut through the richness with tang and salt.
  • Something green: arugula (or spinach, parsley, or basil) for freshness and a peppery bite.

Key ingredients

Green cabbage

Spaghetti

Long noodles twirl beautifully with the silky cabbage strands, but any pasta shape works. Most dried spaghetti is vegan (just semolina and water), but check the label for egg.

Preserved lemon

Preserved lemons are lemons cured in salt and their own juice, a staple in North African and Middle Eastern cooking. The soft rind tastes intensely lemony, salty, and floral without the sharp sourness of fresh lemon. Rinse, remove the pulp and seeds, and finely chop the rind. Find them in jars near the olives or in specialty stores.

Arugula

A couple of handfuls of arugula wilt slightly from the heat of the pasta and add a fresh, peppery contrast to the sweet cabbage.

Nutritional yeast and panko

Nutritional yeast brings a savory, cheesy, umami flavor, and panko breadcrumbs toasted in olive oil add irresistible crunch. Together they're an easy vegan stand-in for parmesan and breadcrumbs (the classic Italian pangrattato).

Chili garlic (optional)

How to make caramelized cabbage spaghetti

  1. Start the cabbage. Heat the olive oil in your largest skillet or Dutch oven over medium heat. Add the sliced cabbage and a big pinch of salt. It will look like way too much, but it cooks down a lot.
  2. Caramelize low and slow. Cook for 25 to 30 minutes, stirring every few minutes and spreading it back out so more cabbage touches the pan. Add a splash of water if browned bits start to scorch. It's ready when it's soft, jammy, and deeply golden.
  3. Toast the panko. While the cabbage cooks, toast the panko in a small pan with a drizzle of olive oil and a pinch of salt over medium heat for 3 to 4 minutes, stirring, until golden. Set aside.
  4. Boil the spaghetti. Cook the spaghetti in well-salted boiling water until just shy of al dente. Reserve 1 cup of pasta water.
  5. Combine. Use tongs to transfer the noodles directly into the cabbage pan with about ½ cup of pasta water. Toss over medium heat for 1 to 2 minutes until glossy, adding more water if it looks dry.
  6. Season to taste. Add black pepper, garlic, red pepper flakes, or whatever you like, and adjust the salt. Remember the preserved lemon is salty, so go easy.
  7. Add the pickled and the green. Off the heat, stir in the chopped preserved lemon and arugula until just wilted.
  8. Top and serve. Divide among bowls and shower with nutritional yeast and toasted panko. Add a spoonful of chili garlic if you're feeling adventurous.

Tips for perfectly caramelized cabbage

  • Use a wide pan. More surface area means more browning and less steaming.
  • Be patient. Real caramelization takes time. If it's pale, keep going. Color equals flavor.
  • Salt early. Salt draws out moisture so the cabbage softens and browns faster.
  • Don't stir constantly. Let it sit a few minutes between stirs to develop golden edges.
  • Deglaze if needed. A splash of water, white wine, or vinegar lifts the browned bits back into the cabbage.

Storage and reheating

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in a skillet with a splash of water to loosen the noodles. Keep the panko topping in a separate container so it stays crunchy, and add fresh arugula when serving. Ingredients
  

Caramelized cabbage pasta

  • 1 small head green cabbage about 2 lb / 900 g, cored and thinly sliced
  • 4 tablespoon olive oil divided
  • 1 teaspoon salt plus more for the pasta water
  • 12 oz spaghetti 340 g, or any pasta
  • 1 cup reserved pasta water
  • seasonings of choice optional: black pepper, minced garlic, red pepper flakes

Something pickled + something green

  • 1 to 2 tablespoon preserved lemon rind rinsed and finely chopped, or capers or pickled onions
  • 2 cups arugula or any tender greens

Topping

  • ½ cup panko breadcrumbs toasted
  • 3 tablespoon nutritional yeast
  • 1 to 2 teaspoon chili garlic oil or chili crisp optional, for the adventurous

Instructions
 

  • Heat 3 tablespoon olive oil in a large skillet or Dutch oven over medium heat. Add the sliced cabbage and salt.
  • Cook 25 to 30 minutes, stirring every few minutes, until soft, jammy, and deeply golden. Add a splash of water if browned bits start to scorch.
  • Meanwhile, toast the panko in a small skillet with the remaining 1 tablespoon olive oil and a pinch of salt for 3 to 4 minutes until golden. Set aside.
  • Boil the spaghetti in well-salted water until just shy of al dente. Reserve 1 cup of pasta water.
  • Transfer the noodles directly into the cabbage pan with about ½ cup pasta water. Toss over medium heat 1 to 2 minutes until glossy, adding more water as needed.
  • Season to taste with pepper, garlic, chili flakes, and salt (go easy, since preserved lemon is salty).
  • Off the heat, stir in the preserved lemon and arugula until just wilted.
  • Serve topped with nutritional yeast, toasted panko, and chili garlic if you like.
