Vegan Fennel Frittata

Cheesy comforting Vegan version of your favorite frittata. If you're looking for a delightful and nutritious breakfast or brunch option, this Vegan Fennel Frittata is a game changer! Utilizing Trader Joe’s Vegan Egg alternative, this frittata is packed with the sweet and anise-like flavor of fennel, along with brussels sprouts and garlic. It's a versatile dish that can be enjoyed any time of day, whether you're hosting a brunch or simply treating yourself to a delicious meal. Plus, it's easy to whip up, making it the perfect choice for busy weeknights or lazy weekends.

Before going vegan, I really loved eggs. Thanks to vegan alternatives Just Egg and now Trader Joe's Simply Eggless you can enjoy making Omelettes, Frittatas, Quiche, Scrambs and basically anything that you can put an egg on. 

In this recipe we use the distinct flavor of Fennel paired with Brussel Sprouts and Garlic to make our favorite comfort food even more nourishing. 

What is Fritatta

Frittata is an Italian egg based dish much like the omelette. Similar to scrambled eggs, crustless quiches it uses other ingredients like cheeses, spinach and other vegetables. Frittata roughly translates to Fried. We veganize this one by using Trader Joe’s Simply Egg.

What you need

  • Trader Joe’s Vegan egg
  • Fennel
  • Garlic
  • Brussel Sprouts
  • Olive Oil
  • vegan Butter
  • Vegan Cheese

What you do

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Vegetables: Using a vegetable peeler or knife, slice the fennel bulb and brussels sprouts thinly. Mince the garlic.
  3. Sauté the Vegetables: In a large frying pan or cast-iron skillet, heat olive oil and vegan butter over medium heat. Add the sliced fennel, brussels sprouts, and garlic. Season with a pinch of salt and black pepper. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized in medium-low heat.
  4. Egg mixture Alternative: In a large mixing bowl, whisk together the Trader Joe’s Vegan Egg mixture until smooth. Pour it over the sautéed vegetables in the skillet, ensuring single layer even distribution.
  5. Add Cheese: Sprinkle the vegan cheese over the top of the frittata mixture.
  6. Bake: Cook on the stove for an additional 2-3 minutes until the edges start to set. Then, transfer the skillet to the preheated oven or place under the broiler for 10-15 minutes until the frittata is firm and golden brown on top.
  7. Serve: Let it cool slightly before slicing into wedges. Serve with a nice green salad or your favorite tomato saladfor a complete meal!

  • Add Veggies: Incorporate other vegetables such as red peppers, spinach, or red onion for added flavor and nutrition.

  • Vegan Sausage: For a heartier frittata, add bite-sized pieces of vegan sausage to the mix before baking.

Substitutions

  • Vegan Cheese: You can use any plant-based cheese you prefer, or omit it for a lower-fat option.
  • Fennel: If fennel isn’t available, try using leeks or asparagus for a different flavor profile.
  • Garlic: Substitute with garlic powder if fresh garlic is not on hand.

  • Can I make this frittata ahead of time?
    Yes! You can prepare the frittata in advance and store it in an airtight container in the fridge for up to 4-5 days. Reheat in the oven or microwave before serving.
  • Is this frittata gluten-free?
    Yes, as long as your vegan cheese and egg substitute are gluten-free, this recipe is suitable for gluten-free diets.

Top Tip

Hint
