- 1 Pack vegan sausage
- 1 Bulb onions
- 1 Handful tomatoes
- 1 Piece aubergine
- 1 Piece zuchinni
- 1 tablespoon corn starch
- 1 Cup stock
- 1 Cup brown rice
Rinse 1 cup of rice under cold water. Add to a pot with 2 cups of water. Bring to a boil, then reduce heat to low, cover and let it simmer for 45 minutes. Don't peek! After 45 minutes, remove from heat and let it sit, still covered, for 15 minutes.
Simply slice zuchinni & eggplant, toss with olive oil, salt, and pepper, then roast at 400°F (200°C) for about 25 minutes. For extra flavor, sprinkle with your favorite herbs or spices before roasting. Enjoy this easy, nutritious, and tasty dish!
