Ingredients
  

  • 2 tablespoons olive oil
  • 2 large onions thinly sliced
  • 8 ounces baby Bella mushrooms sliced
  • 1 tablespoon sugar
  • 2 tablespoons soy sauce
  • 2 cups oat milk or any plant-based milk of your choice
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • Fresh herbs such as thyme or rosemary, for garnish (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
  • Once the onions are caramelized, add the sliced mushrooms to the skillet. Cook until they are soft and golden brown, about 5-10 minutes.
  • Sprinkle sugar over the onions and mushrooms, stirring to combine. This will help deepen the caramelization and add a hint of sweetness to the gravy.
  • Stir in the soy sauce, allowing it to coat the onions and mushrooms evenly.
  • In a small bowl, whisk together the oat milk and flour until smooth. Pour the mixture into the skillet, stirring constantly until the gravy thickens, about 5-7 minutes.
  • Season the gravy with salt and black pepper to taste. If desired, garnish with fresh herbs before serving.
