  • 2 Off Beast vegan rib eye steaks room temperature
  • 3 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dry mustard
  • Fresh rosemary sprigs
  • For the Pot Roast Base:
  • 8 garlic cloves minced
  • 2 large onions chunked
  • 4 large potatoes quartered
  • 3 cups baby bella mushrooms
  • 3 large carrots chunked
  • 2 cups cherry tomatoes
  • 1 cup green beans
  • 1 cup Brussels sprouts
  • 1 cup green peas
  • 3 tablespoons tomato paste
  • 1 cup red wine
  • 2 cups cooking liquid using bouillon cube
  • 2 tablespoons vegan butter
  • Seasonings:
  • Black pepper to taste
  • Horseradish sauce for serving

Instructions
 

Prepare & Sear (15 mins)

  • Bring vegan steaks to room temperature
  • Season well
  • Sear in Dutch oven until golden
  • Set aside on cutting board

Build Base (20 mins)

  • Sauté garlic and onions
  • Add root vegetables
  • Incorporate tomato paste
  • Deglaze with red wine

Create Sauce (10 mins)

  • Add cooking liquid
  • Stir in seasonings
  • Bring to simmer
  • Add mushrooms

Combine & Cook

  • Return vegan rib eye
  • Add remaining vegetables
  • Cover and simmer
  • Monitor internal temperature
  • Finish & Serve (10 mins)
  • Let roast rest
  • Finish with vegan butter
  • Slice into thick slices
