1 block of firm tofu pressed and cubed 1 cup dried butter beans soaked overnight and drained 2 cups fresh spinach chopped 2 cups kale destemmed and chopped 2 tablespoons sofrito paste 1 onion finely chopped 3 cloves garlic minced 4 cups water or vegetable stock Salt and pepper to taste Olive oil for cooking
