- 12 oz Off Beast Steak or vegan alternative like seitan, tempeh, or tofu
- ⅓ cup Olive oil or vegan butter
- ⅓ cup All-purpose flour
- 1 medium Yellow onion diced
- 2 stalks Celery diced
- 1 large Green bell pepper diced
- 1 medium Potato peeled and cubed
- 1 cup Sliced okra fresh or frozen
- 4 cups Vegetable stock
- 2 teaspoon Cajun seasoning
- ½ teaspoon Smoked paprika
- ½ teaspoon Garlic powder
- ¼ teaspoon Cayenne pepper optional, for heat
- To taste Salt and black pepper
- For garnish Chopped scallions optional
- As desired Cooked white rice for serving
Heat oil in a large pot. Sear your Off Beast Steak until browned on both sides. Remove and set aside.
Add more oil and slowly whisk in flour. Stir constantly over medium-low heat until the roux turns a deep brown—this can take 15–25 minutes. Be patient!
Toss in chopped onion, celery, and bell pepper. Stir until soft and aromatic.
Stir in potatoes and okra. Let them coat in the roux and aromatics.
Pour in your favorite veggie broth and bring everything to a simmer.
Add the seared Off Beast Steak back in. Simmer for 20–30 minutes, letting the flavors come together beautifully.
Ladle into bowls. Serve with rice, crusty bread, or all by itself.
