- 2 Juicy Marbles Thick-Cut Filets 4 oz each, thawed in the fridge if frozen
- 1 to 2 tablespoon sunflower oil or another high-heat oil
- salt and black pepper to taste
- ¼ teaspoon garlic powder optional
- 1 tablespoon vegan butter optional, for basting
- 2 garlic cloves smashed, optional, for basting
- 3 to 4 sprigs fresh thyme or rosemary optional, for basting
Thaw and temper: Thaw the filets in the fridge if frozen. Take them out 10 to 15 minutes before cooking and pat dry with a paper towel.
Season: Season both sides lightly with salt, pepper, and garlic powder if using.
Heat the pan: Heat a cast iron or heavy nonstick skillet over medium-high heat and add the sunflower oil.
Sear: Add the filets and sear without moving for 3 to 4 minutes, until deeply golden. Flip and sear the other side for 3 to 4 minutes.
Baste: Lower the heat to medium. Add the vegan butter, garlic, and thyme, tilt the pan, and spoon the melted butter over the steaks for about 1 minute.
Check the temperature: Cook to an internal temperature of 167°F (75°C), as recommended by Juicy Marbles.
Rest and serve: Rest 3 to 5 minutes, then slice against the grain. Serve with mashed potatoes and mushroom gravy.
Air fryer: Brush with oil and air fry at 400°F for 6 to 7 minutes, flipping halfway, until 167°F inside.
Oven: Sear both sides, then finish in a 375°F oven for 5 to 6 minutes.
Storage: Use an opened package the same day. Refrigerate cooked leftovers up to 3 days and reheat in a skillet, not the microwave.
