Fusili with Vegan Ragu

- 1 Whole onion
- 4 Cloves garlic
- 5 tablespoon olive oil
- 1 Pack vegan meat
- 1 Pack Trader Joe’s giant Fusili
- 1 Can crushed tomatoes
- 3 tablespoon spices of your choice
- ½ Cup vegan cheese to top and melt with
- 1 Bunch herbs optional
Cook the fusili pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.
Add the vegan ground meat substitute to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Pour in the crushed tomatoes and sprinkle in the dried basil and oregano. Stir well to combine.
Reduce the heat to low and let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together. Season with salt and pepper to taste. Maybe a touch of sweetener too! Top with vegan cheese, broil to melt.
Serve the cooked fusili pasta in bowls and top with the vegan meat sauce. Garnish with fresh basil leaves if desired.
