Fusili with Vegan Ragu

Ingredients
  

  • 1 Whole onion
  • 4 Cloves garlic
  • 5 tablespoon olive oil
  • 1 Pack vegan meat
  • 1 Pack Trader Joe’s giant Fusili
  • 1 Can crushed tomatoes
  • 3 tablespoon spices of your choice
  • ½ Cup vegan cheese to top and melt with
  • 1 Bunch herbs optional

Instructions
 

  • Cook the fusili pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.
  • Add the vegan ground meat substitute to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  • Pour in the crushed tomatoes and sprinkle in the dried basil and oregano. Stir well to combine.
  • Reduce the heat to low and let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together. Season with salt and pepper to taste. Maybe a touch of sweetener too! Top with vegan cheese, broil to melt.
  • Serve the cooked fusili pasta in bowls and top with the vegan meat sauce. Garnish with fresh basil leaves if desired.
