Ingredients
  

  • 2 tablespoons olive oil
  • 3 large yellow onions thinly sliced
  • 3 cloves garlic minced
  • 2 cups cooked chickpeas or 1½ cans, drained and rinsed
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • ¼ cup sun-dried tomatoes chopped
  • 1 cup diced tomatoes canned or fresh
  • 2 cups fresh spinach loosely packed
  • ½ cup shredded vegan cheese more to taste
  • ¼ cup vegetable broth for deglazing
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika optional
  • Pinch red chili flakes optional, for heat

Instructions
 

Step 1: Caramelize the Onions

  • Heat olive oil in a skillet over medium-low heat. Add the sliced onions and cook slowly for 20–30 minutes, stirring occasionally, until they turn golden brown and deeply caramelized.

Step 2: Build the Flavor Base

  • Add minced garlic, sun-dried tomatoes, and fresh thyme. Sauté for another 2–3 minutes until aromatic. Then, pour in vegetable broth to deglaze the pan, scraping up all the flavorful bits.

Step 3: Add Main Ingredients

  • Stir in the chickpeas and diced tomatoes. Simmer everything together for 5–7 minutes, letting the mixture thicken and the chickpeas soak up the flavor.

Step 4: Season and Wilt

  • Season with salt, pepper, and optional smoked paprika or chili flakes. Then fold in the spinach and cook until it wilts, just about 1–2 minutes.

Step 5: Top with Vegan Cheese & Serve

  • Sprinkle with vegan cheese, cover the skillet, and let it melt. Once gooey and delicious, serve hot with crusty bread or grain of choice.
