- 2 tablespoons olive oil
- 3 large yellow onions thinly sliced
- 3 cloves garlic minced
- 2 cups cooked chickpeas or 1½ cans, drained and rinsed
- 1 teaspoon fresh thyme or ½ teaspoon dried thyme
- ¼ cup sun-dried tomatoes chopped
- 1 cup diced tomatoes canned or fresh
- 2 cups fresh spinach loosely packed
- ½ cup shredded vegan cheese more to taste
- ¼ cup vegetable broth for deglazing
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika optional
- Pinch red chili flakes optional, for heat
Step 1: Caramelize the Onions
