Easy African Vegan Jollof Recipe

African inspired recipe, this one pot rice recipe is a step up from your usual rice & beans or paella.

Ingredients
  

  • 1 Bulb onion
  • 1 Bulb garlic
  • 1 Pc bell pepper
  • 3 tablespoon olive oil
  • 1 Cup arborio rice
  • 5 tablespoon tomato paste
  • 2 tablespoon seasoning
  • 1 ½ Cup Veg stock

Instructions
 

  • Sauté or pan fry slices of onions. Add in tomato paste, reduce till the color darkens.
  • Roast slices of onions, cloves of garlic and bell pepper on 450F for 20 minutes.
  • Blend the roasted peppers along with some seasonings.
  • Add arborio rice into the pan. Mix and stir well.
  • Add blended peppers into the pan, add 1 cup of stock. Turn the fire to low, cover and let cook for 20 mins.
  • Stir every once in a while to keep from burning. Adjust liquid as needed.

Keep the fire on low to avoid burning the bottom layer of the pan.
