- * 2 tablespoon nutritional yeast
- * 1 cup raw cashews soaked
- * 1 pound penne pasta
- * 3 cups fresh spinach
- * ¼ cup olive oil
- * Juice of one lemon
- * Red pepper flakes to taste
- * Salt and black pepper to taste
- * ½ cup cashew cream prepared by blending soaked raw cashews
- * ¼ cup plant milk
- * 1 garlic clove minced

PREPARE CASHEW CREAM SAUCE:
In a food processor, blend together all the cashew cream sauce ingredients until smooth. Set aside.
COOK THE PENNE PASTA:
Cook the penne pasta according to package directions until al dente. Reserve a cup of pasta water before draining.
SAUTÉED ONION AND SPINACH:
