Ingredients
  

  • * 1 large onion sliced
  • * 2 tablespoon nutritional yeast
  • * 1 cup raw cashews soaked
  • * 1 pound penne pasta
  • * 3 cups fresh spinach
  • * ¼ cup olive oil
  • * Juice of one lemon
  • * Red pepper flakes to taste
  • * Salt and black pepper to taste
  • * ½ cup cashew cream prepared by blending soaked raw cashews
  • * ¼ cup plant milk
  • * 1 garlic clove minced
  • * Salt and black pepper to taste

Instructions
 

  • PREPARE CASHEW CREAM SAUCE:
  • In a food processor, blend together all the cashew cream sauce ingredients until smooth. Set aside.
  • COOK THE PENNE PASTA:
  • Cook the penne pasta according to package directions until al dente. Reserve a cup of pasta water before draining.
  • SAUTÉED ONION AND SPINACH:
  • In a large pan, heat olive oil over medium heat. Add chopped onion and sauté until golden brown.
  • Add choice of protein.
  • Add fresh spinach to the pan and cook until wilted. Season with salt, black pepper, and red pepper flakes.
  • COMBINE AND SERVE:
  • Pour in the cashew cheese sauce and stir until all ingredients are well combined.
  • Toss the cooked penne pasta into the creamy mixture, adding reserved pasta water as needed for desired consistency.
