Ingredients
  

  • - 8 ounces 225g macaroni
  • - 1 block 14 ounces or 400g organic firm tofu, pressed and crumbled
  • - ¼ cup nutritional yeast
  • - ½ small onion finely chopped
  • - 1 cup canned pumpkin puree
  • - 1 teaspoon garlic powder
  • - ½ teaspoon paprika
  • - ½ teaspoon dried thyme
  • - ¼ teaspoon ground nutmeg
  • - Salt and pepper to

Instructions
 

  • Cook the macaroni according to the package instructions until al dente. Drain and set aside.
  • In a blender combine the crumbled tofu, nutritional yeast, chopped onion, canned pumpkin puree, garlic powder, paprika, dried thyme, ground nutmeg, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  • Add the cooked macaroni to the bowl and gently fold it into the tofu-pumpkin mixture until the macaroni is well coated.
  • Serve the Vegan Pumpkin Tofu Mac & Cheese hot and enjoy!
