Vegan One-Pot Thanksgiving Mac & Cheese

Ingredients
  

  • 12 ounces of semi-fresh cavatelli or your favorite pasta shape
  • 2 ½ cups of unsweetened plant milk such as almond, soy, or coconut milk
  • 3 tablespoons of vegan butter
  • 2 cups of shredded vegan cheese cheddar or mozzarella-style works best
  • ½ cup of vegan bacon crumbles store-bought or homemade
  • ½ cup of breadcrumbs toasted for topping
  • 2 tablespoons of nutritional yeast for a cheesy flavor boost
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • ½ teaspoon of salt adjust to taste
  • ½ teaspoon of black pepper

Instructions
 

  • Melt Vegan Butter with Seasonings
  • Heat vegan butter in a large saucepan over medium heat. Add garlic powder, onion powder, and nutritional yeast for a cheesy flavor. Stir until fragrant.
  • Add Pasta and Liquid
  • Add the cavatelli to the pot, followed by water/stock and plant milk. Stir well to coat the pasta. Cover and cook over medium heat, stirring occasionally.
  • Incorporate Vegan Cheese
  • Once the pasta is tender, reduce the heat to low. Add vegan cheese and stir until it melts into a creamy sauce. Adjust seasoning with salt and pepper.
  • Top and Serve
  • Sprinkle crumbled vegan bacon and toasted breadcrumbs over the top. Serve warm and garnish with fresh herbs if desired.
