Ingredients
  

  • 2 tablespoons olive oil or any neutral oil
  • 1 medium onion diced
  • 2 celery stalks chopped
  • 1 bell pepper green or red, chopped
  • 2 Beyond Sausage links sliced into coins or crumbled
  • cups mushrooms sliced (cremini or button recommended)
  • 1 medium potato peeled and cubed (Yukon gold or russet)
  • 2 tablespoons all-purpose flour or gluten-free flour blend
  • 1 tablespoon miso paste white or yellow miso
  • 1 teaspoon Better Than Bouillon – Vegetable Base or 1 cube vegan bouillon
  • 4 cups vegetable stock or water + more bouillon to taste
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon Cajun seasoning adjust to heat preference
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 –2 tablespoons vegan cream cheese optional, for richness
  • Fresh parsley or green onions chopped (for garnish – optional)
  • Cooked white rice for serving (optional but traditional)

Instructions
 

Step 1: Sauté Your Base

  • In a large pot, heat oil and sauté onions, celery, and bell peppers until soft—this is your holy trinity of gumbo. Add the Beyond Sausage and cook until lightly browned.

Step 2: Add Mushrooms & Seasonings

  • Stir in mushrooms, herbs (thyme, bay leaf), and Cajun seasoning. Let everything brown and release flavor, stirring frequently.

Step 3: Sprinkle in the Flour

  • Sprinkle in flour and stir constantly to coat the veggies and sausage—this creates the roux and thickens the gumbo. Let it toast for 2–3 minutes for depth.

Step 4: Pour in Stock

  • Slowly add your vegetable stock or water while stirring to avoid lumps. Add the Better Than Bouillon for extra richness.

Step 5: Add Miso & Potatoes

  • Once your broth is smooth and simmering, stir in the miso paste and cubed potatoes. Let the gumbo simmer for 20–25 minutes, or until potatoes are fork-tender and flavors have melded beautifully.

Step 6: Optional Creaminess

  • Turn off the heat and stir in a spoonful of vegan cream cheese to make it extra luscious (optional, but divine).
