This moist and fluffy Vegan Chocolate Chip Banana Bread is made with ripe bananas, coconut sugar, and vegan butter. A perfect quickbread recipe for breakfast, dessert, or snacking—dairy-free and egg-free!
¾cupbrown sugarwith optional extra brown sugar for the top
2tablespoonflax
1teaspoonvanilla extract
4or 5 large bananas
Instructions
Preheat the oven to 350°F (175°C). Grease and lightly flour a loaf pan, or line with parchment paper for easy removal.
Mash the bananas in a large mixing bowl until smooth but still slightly chunky.
Add the wet ingredients: Stir in the softened vegan butter, coconut sugar, flax & water, and vanilla extract until well combined.
Mix in dry ingredients: Sprinkle in the baking soda, salt, cinnamon, and flour. Stir gently until no flour streaks remain—be careful not to overmix, which can make the bread dense.
Fold in the chocolate chips using a spatula. Save a few to sprinkle on top before baking for a picture-perfect loaf.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean (a few melted chocolate smudges are fine!).
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
