Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup softened unsalted butter
  • ¾ cup brown sugar with optional extra brown sugar for the top
  • 2 tablespoon flax
  • 1 teaspoon vanilla extract
  • 4 or 5 large bananas

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and lightly flour a loaf pan, or line with parchment paper for easy removal.
  • Mash the bananas in a large mixing bowl until smooth but still slightly chunky.
  • Add the wet ingredients: Stir in the softened vegan butter, coconut sugar, flax & water, and vanilla extract until well combined.
  • Mix in dry ingredients: Sprinkle in the baking soda, salt, cinnamon, and flour. Stir gently until no flour streaks remain—be careful not to overmix, which can make the bread dense.
  • Fold in the chocolate chips using a spatula. Save a few to sprinkle on top before baking for a picture-perfect loaf.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean (a few melted chocolate smudges are fine!).
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
