Trader Joe’s Vegan One-Pot Hamburger Helper with Mushrooms & Zucchini

Whip up this cozy Trader Joe’s Vegan One-Pot Hamburger Helper with mushrooms & zucchini. A creamy, plant-based pasta that’s hearty, budget-friendly, and weeknight perfect!

Ingredients
  

  • 2 tablespoons olive oil or avocado oil
  • 8 oz mushrooms sliced (cremini or baby bella work well)
  • 2 small zucchinis about 2 cups, halved lengthwise and sliced into half-moons
  • 2 shallots finely diced (or ½ small onion)
  • 4 cloves garlic minced
  • 8 oz Trader Joe’s Black Pepper Barilotti pasta or similar short pasta like rigatoni or penne
  • 12 oz Impossible™ Beef or other plant-based ground
  • 1 14 oz can diced tomatoes
  • 3 cups vegetable stock plus extra as needed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon chili flakes optional, for a kick
  • 1 teaspoon coconut sugar or brown sugar
  • 1 teaspoon sea salt plus more to taste
  • ½ teaspoon black pepper freshly cracked
  • 1 cup shredded vegan cheese Trader Joe’s has great cashew mozzarella shreds
  • Fresh parsley or basil optional, for garnish

Instructions
 

Sauté the Mushrooms

  • In a large pot, warm a drizzle of olive oil with medium high heat. Add mushrooms and cook until golden brown and slightly crispy on the edges.

Add Aromatics

  • Stir in the shallots and garlic. Cook until fragrant and softened.

Fold in the Zucchini

  • Toss in the zucchini slices and cook until they just begin to soften.

Brown the Impossible™ Beef

  • Push veggies to the side and add Impossible Beef. Break it apart with a wooden spoon and cook until it’s lightly browned. Scrape the bottom of the pan

Add Tomatoes & Seasonings

  • Stir in the canned tomatoes, coconut sugar, and spices. Let simmer for a few minutes to meld flavors.

Add Pasta & Stock

  • Pour in the vegetable stock and pasta. Stir well, making sure the pasta is submerged. Cover and cook until pasta is al dente, stirring occasionally.

Finish with Vegan Cheese

  • Once pasta is tender and sauce has thickened, stir in vegan cheese until creamy. Taste and adjust seasoning with salt, pepper, or extra herbs.
