Crispy Eggplant
- 2 large eggplants
- ¾ cup cornstarch
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Neutral oil for pan-frying
Sticky Black Bean Sauce
- 1 tablespoon neutral oil
- 1 small onion finely diced
- 5 garlic cloves minced
- 1- inch piece fresh ginger grated
- 2 tablespoons black bean paste
- 2 tablespoons soy sauce
- 1½ tablespoons rice vinegar
- 2 tablespoons coconut sugar or brown sugar
- ½ cup vegetable broth or water
- 1 teaspoon toasted sesame oil
Slurry
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Garnish
- 3 scallions thinly sliced
- Sesame seeds
- Fresh cilantro optional
- Chili crisp or sliced chili peppers optional
Step 1: Prepare the Eggplant
Cut the eggplant into bite-sized wedges or thick slices.
Place the pieces in a bowl and season lightly with salt, garlic powder, and black pepper. Toss with cornstarch until every piece is thoroughly coated.
Shake off any excess cornstarch.
Kitchen Technique: Make sure the eggplant is dry before coating it. Excess moisture can cause the cornstarch to become gummy instead of crisp.
Step 2: Pan-Fry Until Crispy
Heat a generous layer of neutral oil in a large skillet over medium-high heat.
Add the coated eggplant in a single layer, working in batches if necessary. Pan-fry until deeply golden and crunchy on all sides.
Transfer to a wire rack or paper towel-lined plate.
Kitchen Technique: Don't overcrowd the pan. Crowding lowers the oil temperature and causes the eggplant to steam instead of crisp.
Set the crispy eggplant aside while you make the sauce.
Step 3: Sauté the Aromatics

Step 4: Build the Sticky Sauce
Add the soy sauce, vinegar, coconut sugar, and vegetable broth. Stir well and bring everything to a gentle simmer.
Taste the sauce. You want a balance of salty, savory, tangy, and slightly sweet.
Mix the cornstarch with cold water in a small bowl to make a slurry.
Slowly pour the slurry into the simmering sauce while stirring constantly. Cook for 1–2 minutes until the sauce becomes glossy and thick.
Kitchen Technique: Always mix cornstarch with cold water before adding it to hot liquid. This prevents lumps and gives you a smooth sauce.
Step 5: Toss & Finish
Add the crispy eggplant to the pan and gently toss until coated in the sticky black bean sauce.
Turn off the heat and drizzle with toasted sesame oil.
Transfer to a serving dish and garnish generously with scallions and sesame seeds.
Serve immediately while the eggplant is still crisp around the edges.
