Ingredients
  

  • 2 cups kale chopped
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 8 oz spaghetti
  • 2 tablespoons Zeroe Vegan Caviar or more to taste
  • 1 lemon juiced (plus extra wedges for serving)
  • 2 tablespoons vegan cream cheese optional, for added creaminess
  • To taste black pepper

Instructions
 

  • Prepare the Pasta: Cook the spaghetti according to package instructions in a large pot of salted water until al dente. Drain and set aside.
  • Sauté the Aromatics: In a large skillet over medium heat, warm the olive oil. Add the finely chopped onion and minced garlic, cooking for 2-3 minutes until softened and fragrant.
  • Add the Kale: Add the chopped kale to the skillet with a splash of water if needed. Sauté for 3-4 minutes until the kale is wilted but still vibrant in color.
  • Combine and Season: Add the cooked spaghetti to the skillet and toss with the kale mixture. Squeeze in the lemon juice, sprinkle with black pepper, and toss to combine.
  • Add Vegan Caviar and Creaminess: Fold in the Zeroe Vegan Caviar and, if desired, the vegan cream cheese for extra creaminess. Gently toss everything together until the spaghetti is well-coated.
  • Serve: Transfer to serving plates, garnish with lemon wedges, and add a little more vegan caviar on top for presentation. Serve immediately and enjoy!
