Spaghetti Alla Chitarra
A vegan twist on the classic Italian dish, Spaghetti alla Chitarra, that is both flavorful and satisfying.

- 1 Whole onion
- 1 Bulb garlic
- 5 tablespoon olive oil
- 2 tablespoon seasoning
- 1 Head broccoli
- 8 Oz vegan cheese
- 5 Pieces tomatoes
- 16 Oz marinara
- 1 Pack Alla chitarra pasta (Trader Joe’s)
Cook the vegan spaghetti alla chitarra according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté until they become translucent and slightly caramelized.
Add the broccoli florets to the skillet and cook for about 5 minutes, or until they become tender-crisp.
Pour the tomato marinara sauce into the skillet and stir well to combine with the onions and broccoli. Allow the sauce to simmer for a few minutes to heat through.
Add the cooked vegan spaghetti alla chitarra to the skillet and toss gently to coat the pasta with the sauce.
Season with salt and pepper to taste. If desired, you can also add additional herbs or spices to enhance the flavor.
Sprinkle the grated vegan cheese over the pasta and cover the skillet with a lid. Allow the cheese to melt for a few minutes.
Once the cheese has melted, remove the skillet from heat and serve the vegan spaghetti alla chitarra with broccoli immediately.
