Ingredients
  

For the Croutons

  • 5 cups day-old bread sourdough or ciabatta, cut into 1-inch cubes
  • 2 tablespoon vegan butter
  • 2 tablespoon olive oil
  • 2 teaspoon smoky garlic salt or to taste

For the Salad

  • 4 cups mixed greens arugula, spinach, or tender lettuces
  • 4 large ripe tomatoes cut into wedges or chunks
  • 2 medium shallots thinly sliced
  • 3 tablespoon extra virgin olive oil
  • 2 –3 tablespoon balsamic vinegar Costco’s works beautifully!
  • Freshly ground black pepper to taste

Instructions
 

  • Toast the Bread – In a skillet, heat vegan butter and olive oil. Add bread cubes, season with smoky garlic salt, and toast until golden and crisp.
  • Soak the Shallots – Slice shallots and let them sit in a splash of balsamic to mellow their sharpness.
  • Prep the Veggies – Chop tomatoes into chunks and wash/dry your greens.
  • Assemble the Salad – In a large bowl, combine greens, tomatoes, marinated shallots, and smoky croutons.
  • Dress & Serve – Drizzle with extra virgin olive oil and balsamic, toss gently, and enjoy immediately with a sparkling fruity drink.
