For the Croutons 5 cups day-old bread sourdough or ciabatta, cut into 1-inch cubes 2 tablespoon vegan butter 2 tablespoon olive oil 2 teaspoon smoky garlic salt or to taste For the Salad 4 cups mixed greens arugula, spinach, or tender lettuces 4 large ripe tomatoes cut into wedges or chunks 2 medium shallots thinly sliced 3 tablespoon extra virgin olive oil 2 –3 tablespoon balsamic vinegar Costco’s works beautifully! Freshly ground black pepper to taste
Toast the Bread – In a skillet, heat vegan butter and olive oil. Add bread cubes, season with smoky garlic salt, and toast until golden and crisp.
Soak the Shallots – Slice shallots and let them sit in a splash of balsamic to mellow their sharpness.
