Ingredients
  

  • 2 tablespoons olive oil
  • 1 red onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 can black beans 15 oz, rinsed and drained
  • 2 cups cooked quinoa
  • Juice of 1 lime
  • ¼ cup chopped fresh cilantro or parsley

Instructions
 

Sauté the Aromatics

  • In a skillet over medium heat, add olive oil.
  • Sauté chopped red onion and garlic until softened and fragrant.

Add Veggies and Spices

  • Stir in diced red bell pepper.
  • Add cumin, smoked paprika, salt, and black pepper.
  • Cook until peppers begin to soften.

Add Black Beans

  • Rinse and drain canned black beans before adding them to the skillet.
