  • ½ cup vegan mayo – Creamy and dairy-free the perfect binder.
  • ½ small red onion finely chopped – Adds a sharp, fresh bite.
  • ½ cup peas fresh or frozen – Sweet and vibrant.
  • ½ cup corn fresh, canned, or frozen – A juicy pop of sweetness.
  • cup jalapeño chips crushed – For a spicy crunch.
  • 1 teaspoon wasabi – Adds a bold kick of heat.
  • 1 tablespoon apple cider vinegar – Brightens the flavors with a tangy twist.
  • Salt and pepper to taste – For simple classic seasoning.

Instructions
 

  • Mash the Chickpeas: Add your chickpeas to a large mixing bowl. Using a fork or potato masher, mash about 75% of them. Leave some chunks for texture.
  • Mix in the Mayo: Stir in the vegan mayo for creaminess. Add a splash more if you prefer a smoother salad.
  • Add the Veggies: Toss in the red onion, peas, and corn. Mix until everything is evenly coated.
  • Add Some Kick: Mix in the wasabi and apple cider vinegar. Adjust to your preferred spice level.
  • Crunch Time: Just before serving, sprinkle in the crushed jalapeño chips for that addictive crunch.
  • Season to Taste: Add salt and pepper as desired.
