  • Olive oil for searing (if needed)

Green Bean Pasta Salad

  • 12 ounces rotini or fusilli pasta
  • 10 ounces fresh green beans trimmed and cut into bite-sized pieces
  • 1 English cucumber diced
  • 2 ripe plums diced
  • ½ cup chopped parsley
  • ¼ cup chopped basil

Creamy Lemon Sesame Dressing

  • ½ cup vegan mayonnaise
  • 1 tablespoon toasted sesame oil
  • tablespoons soy sauce
  • Juice of 1 lemon
  • 1 tablespoon apple cider vinegar or rice vinegar
  • 2 tablespoons nutritional yeast
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Fresh cracked black pepper
  • Salt to taste
  • ¼ cup grated vegan Parmesan

Instructions
 

Step 1: Cook the Pasta and Green Beans

  • Bring a large pot of salted water to a boil and cook the pasta according to the package directions. During the last 2 minutes of cooking, add the green beans directly to the pot.
  • Drain everything together and immediately rinse under cold water until completely cool. Drain well.
