- 1 package Hurst’s HamBeens Cajun 15 Bean Soup
- 1 tablespoon olive oil
- 1 large onion diced
- 1 bell pepper diced
- 3 carrots sliced
- 3 –4 cloves garlic minced
- 1 can diced tomatoes 14.5 oz
- 4 –5 cups vegetable broth with Better Than Bouillon
- 2 cups water adjust as needed
- 2 cups green cabbage chopped
- 1 bay leaf
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- Black pepper to taste
- Optional: cayenne pepper for heat
- Cooked white or brown rice for serving, or cook rice along with the soup
Sauté the aromatics
In a large soup pot, heat olive oil over medium heat. Add onion, bell pepper, and carrots. Cook 5–7 minutes until softened.
Build the soup
Add beans, diced tomatoes, vegetable broth, water, and bay leaf. Stir well.
