Ingredients
  

  • 1 package Hurst’s HamBeens Cajun 15 Bean Soup
  • 1 tablespoon olive oil
  • 1 large onion diced
  • 1 bell pepper diced
  • 3 carrots sliced
  • 3 –4 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 4 –5 cups vegetable broth with Better Than Bouillon
  • 2 cups water adjust as needed
  • 2 cups green cabbage chopped
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Black pepper to taste
  • Optional: cayenne pepper for heat
  • Cooked white or brown rice for serving, or cook rice along with the soup

Instructions
 

Rinse the beans

  • Rinse the 15-bean mix under cold water and remove any debris.

Sauté the aromatics

  • In a large soup pot, heat olive oil over medium heat. Add onion, bell pepper, and carrots. Cook 5–7 minutes until softened.

Add garlic & spices

  • Stir in garlic, smoked paprika, thyme, and black pepper. Cook 30 seconds until fragrant.

Build the soup

  • Add beans, diced tomatoes, vegetable broth, water, and bay leaf. Stir well.

Simmer

  • Bring to a boil, then reduce heat to low. Cover and simmer for 60–75 minutes, stirring occasionally.

Add cabbage

  • Stir in chopped cabbage during the last 20 minutes of cooking.

Season & serve

  • Taste and adjust seasoning. Remove bay leaf. Serve over rice.
