Equipment

  • 1 parchment paper

Ingredients
  

  • 4 Field Roast Caramelized Onion & Beer Sausages or other vegan sausage of choice
  • 2 medium sweet potatoes peeled and cubed (about 3 cups)
  • 1 lb 450 g baby potatoes, halved
  • 2 medium zucchini sliced into half-moons
  • 1 large red or yellow onion cut into wedges
  • 2 tablespoon olive oil or avocado oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme or oregano
  • ½ teaspoon sea salt more to taste
  • ¼ teaspoon black pepper

For the Scallion Spinach Rice

  • 3 cups cooked rice preferably day-old, any variety works
  • 3 cups fresh spinach roughly chopped
  • 4 scallions green onions, sliced
  • 2 tablespoon olive oil or vegan butter
  • 1 medium lemon zest and juice
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions
 

Prep the Veggies

  • Preheat oven to 400°F (200°C). Cut sweet potatoes, baby potatoes, zucchini, and onions into even chunks.

Season & Roast

  • Toss vegetables with olive oil, paprika, garlic powder, thyme, salt, and black pepper. Spread evenly on a parchment-lined sheet pan. Roast for 20 minutes.

Add the Vegan Sausage

  • Slice the Field Roast sausages into rounds or halves. Add them to the sheet pan with the veggies. Roast another 15–20 minutes until everything is golden brown and caramelized.

Make the Scallion Spinach Rice

  • While the tray bake finishes, heat olive oil in a skillet. Add scallions and cook until fragrant. Stir in spinach and cook until wilted. Add leftover rice, lemon juice, and zest. Toss well and season with salt and pepper.

Serve & Enjoy

  • Scoop scallion spinach rice onto plates, top with roasted sausage and veggies, and garnish with fresh herbs or extra lemon if desired.
