2medium sweet potatoespeeled and cubed (about 3 cups)
1lb450 g baby potatoes, halved
2medium zucchinisliced into half-moons
1large red or yellow onioncut into wedges
2tablespoonolive oilor avocado oil
1teaspoonsmoked paprika
1teaspoongarlic powder
½teaspoondried thymeor oregano
½teaspoonsea saltmore to taste
¼teaspoonblack pepper
For the Scallion Spinach Rice
3cupscooked ricepreferably day-old, any variety works
3cupsfresh spinachroughly chopped
4scallionsgreen onions, sliced
2tablespoonolive oilor vegan butter
1medium lemonzest and juice
½teaspoonsea saltor to taste
¼teaspoonblack pepperor to taste
Instructions
Prep the Veggies
Preheat oven to 400°F (200°C). Cut sweet potatoes, baby potatoes, zucchini, and onions into even chunks.
Season & Roast
Toss vegetables with olive oil, paprika, garlic powder, thyme, salt, and black pepper. Spread evenly on a parchment-lined sheet pan. Roast for 20 minutes.
Add the Vegan Sausage
Slice the Field Roast sausages into rounds or halves. Add them to the sheet pan with the veggies. Roast another 15–20 minutes until everything is golden brown and caramelized.
Make the Scallion Spinach Rice
While the tray bake finishes, heat olive oil in a skillet. Add scallions and cook until fragrant. Stir in spinach and cook until wilted. Add leftover rice, lemon juice, and zest. Toss well and season with salt and pepper.
Serve & Enjoy
Scoop scallion spinach rice onto plates, top with roasted sausage and veggies, and garnish with fresh herbs or extra lemon if desired.
