Ingredients
  

For the Tofu Balls

  • 1 cup plant-based ground meat Nutcase or similar
  • 1 block 14 oz firm tofu, pressed and crumbled
  • 3 tablespoon nutritional yeast
  • 1 tablespoon soy sauce
  • 1 teaspoon Better Than Bouillon vegetable base
  • 2 –3 tablespoon plant milk just enough to bind
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano or Italian herb blend
  • Salt & pepper to taste
  • Oil for frying

For the Vegan Cheese Sauce

  • 2 tablespoon vegan butter or oil
  • 2 tablespoon all-purpose flour
  • 1 ½ cups plant milk
  • 1 cup shredded vegan cheese
  • 2 tablespoon nutritional yeast
  • 1 teaspoon Better Than Bouillon vegetable base
  • ½ teaspoon garlic powder
  • Pinch salt & pepper adjust to taste

For the Couscous Bowl

  • 1 ½ cups dry couscous
  • 1 ½ cups hot vegetable broth or water
  • 2 cups fresh spinach
  • 1 –2 tablespoon lemon juice
  • 1 tablespoon fresh herbs parsley, basil, or a mix
  • Salt & pepper to taste
