For the Tofu Balls
- 1 cup plant-based ground meat Nutcase or similar
- 1 block 14 oz firm tofu, pressed and crumbled
- 3 tablespoon nutritional yeast
- 1 tablespoon soy sauce
- 1 teaspoon Better Than Bouillon vegetable base
- 2 –3 tablespoon plant milk just enough to bind
- 1 teaspoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano or Italian herb blend
- Salt & pepper to taste
- Oil for frying
For the Vegan Cheese Sauce
- 2 tablespoon vegan butter or oil
- 2 tablespoon all-purpose flour
- 1 ½ cups plant milk
- 1 cup shredded vegan cheese
- 2 tablespoon nutritional yeast
- 1 teaspoon Better Than Bouillon vegetable base
- ½ teaspoon garlic powder
- Pinch salt & pepper adjust to taste
For the Couscous Bowl
- 1 ½ cups dry couscous
- 1 ½ cups hot vegetable broth or water
- 2 cups fresh spinach
- 1 –2 tablespoon lemon juice
- 1 tablespoon fresh herbs parsley, basil, or a mix
