Ingredients
  

  • 1 package vegan corned beef
  • 1 medium green cabbage cut into wedges
  • pounds potatoes halved
  • 1 onion sliced
  • 3 tablespoons olive oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon black pepper
  • 2 bay leaves
  • 1 teaspoon garlic powder
  • 1 cup cold water
  • Salt to taste
  • Fresh parsley for garnish

Instructions
 

Step 1: Prepare the Oven

  • Preheat oven to 400°F. Lightly grease a large roasting pan or cast iron skillet with olive oil.

Step 2: Season the Vegetables

  • In a small bowl, combine olive oil, mustard seeds, coriander seeds, black pepper, garlic powder, and salt. Arrange cabbage recipe ingredients, potatoes, and onions inside the roasting pan. Drizzle the seasoning mixture over the vegetables and toss gently. Sear Veggies and vegan steak (optional)

Step 3: Add the Vegan Corned Beef

  • Place the vegan corned beef in the center of the pan. Add bay leaf and pour cold water carefully around the vegetables. Cover loosely with foil.

Step 4: Bake

  • Bake covered for 35 minutes. Remove foil and continue roasting for another 20–25 minutes until the cabbage becomes golden brown and the potatoes are tender. The edges should become crispy and caramelized.

Step 5: Serve
