  • 1 pack Glory Land Pad Thai noodles with flavor packet included
  • ½ block firm tofu about 7 oz, pressed and cubed
  • 1 small onion thinly sliced
  • ½ cup cherry tomatoes halved (or 1 medium tomato, chopped)
  • 1 cup greens spinach, baby bok choy, or kale, roughly chopped
  • 1 tablespoon nutritional yeast
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cooking oil for sautéing
  • 2 –4 tablespoons noodle cooking water as needed to loosen sauce

Instructions
 

  • Prep tofu – Pat dry and pan-fry in oil until golden on all sides. Set aside.
  • Sauté aromatics – In the same pan, add sliced onions. Cook until translucent, then toss in tomatoes. Sauté until they blister slightly.
  • Add greens – Wilt your greens into the mix.
  • Cook noodles – Boil or soak your Glory Land Pad Thai noodles according to package instructions. Reserve a bit of noodle water.
  • Combine – Toss noodles, tofu, and flavor packet with veggies in the pan. Add a splash of noodle water to coat evenly.
  • Finish – Plate, then top with nutritional yeast, lemon zest, and a squeeze of fresh lemon juice.
