  • 2 tablespoons olive oil
  • 2 large leeks thinly sliced
  • 4 cloves garlic minced
  • 2 cans of butter beans drained and rinsed
  • 4 cups vegetable broth
  • 2 tablespoons white miso paste
  • 1 cup coconut cream
  • 4 cups chopped kale
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Red pepper flakes optional, for added heat

Instructions
 

  • Sauté Aromatics: In a large saucepan over medium heat, heat olive oil. Add sliced leeks and minced garlic, sautéing until softened and fragrant, about 5-7 minutes.
  • Add Beans and Broth: Stir in the drained and rinsed butter beans, then pour in the vegetable broth. Bring the mixture to a simmer.
  • Make the Miso Base: In a small bowl, mix the white miso paste with a cup of warm water until dissolved. Add the miso mixture to the simmering stew, stirring well to combine.
  • Creamy Addition: Pour in the coconut cream, stirring until well incorporated and the stew becomes creamy. Allow the stew to simmer for another 5-7 minutes, allowing the flavors to meld together.
  • Add Kale: Add chopped kale to the stew, allowing it to wilt and soften in the broth. Cook for an additional 2-3 minutes until the kale is tender but still vibrant green.
  • Finish and Serve: Stir in lemon juice for a bright finish. Season with salt, black pepper, and red pepper flakes (if using) to taste. Serve hot and enjoy with crusty bread or over a bed of fluffy rice.
