  • Tofu: 14 oz firm tofu, drained and pressed
  • Vegan Butter: 2 tablespoons for sautéing and making the gravy
  • Flour: 2 tablespoons for thickening the gravy
  • Cajun Seasoning: 1-2 teaspoons or to taste
  • Black Pepper: ½ teaspoon or to taste
  • Onion Powder: 1 teaspoon
  • Garlic Powder: 1 teaspoon
  • Bell Peppers: 1 medium chopped
  • Better Than Bouillon: 1 teaspoon or vegetable broth as an alternative
  • Cayenne Pepper: ½ teaspoon optional, for extra heat
  • Green Onion: 2 tablespoons for garnish, optional

Instructions
 

  • Prepare the Tofu: Drain and press the tofu to remove excess water. Cut it into pieces resembling chicken pieces. Season with cajun seasoning and a pinch of black pepper.
  • Sear the Tofu: Heat vegan butter in a large skillet over medium-high heat. Add the tofu pieces and cook for about 4-5 minutes per side, until golden brown and crispy. Remove from the pan and set aside.
  • Make the Gravy: In the same skillet, add more vegan butter if needed. Add the onion powder, garlic powder, and chopped bell peppers. Sauté for about 2-3 minutes until the vegetables are softened.
  • Create the Gravy Base: Sprinkle flour over the sautéed vegetables and cook for 1 minute. Slowly add vegetable broth and whisk constantly to prevent lumps. Stir in Better than Bouillon and a little cajun seasoning for extra flavor. Let the gravy simmer for about 10-15 minutes, until thickened.
  • Smother the Tofu: Return the seared tofu to the skillet and coat with the creamy gravy. Reduce the heat to medium heat and simmer for an additional 5-10 minutes to allow the flavors to meld together.
  • Serve: Spoon the rich smothered cajun chicken over a bed of fluffy white rice or mashed potatoes. Garnish with green onion or additional cajun seasoning if desired.
