Turmeric Rice
- 1½ cups jasmine or basmati rice
- 3 cups vegetable broth
- 1 teaspoon turmeric
- ½ teaspoon ground cumin
- 1 tablespoon olive oil

Eggplant & Fennel
- 1 large eggplant sliced into rounds
- 2 fennel bulbs sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon coriander
- Salt and black pepper
Hummus Dressing
- 1 cup hummus
- 3 –5 tablespoons pickle juice
- Juice of ½ lemon
- 1 tablespoon olive oil
- Fresh cracked pepper
Tomato Parsley Salad
- 2 cups diced ripe tomatoes
- ½ cup chopped parsley
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt
- Black pepper

Step 1: Caramelize the Fennel
Heat olive oil in a large skillet over medium heat. Add the sliced fennel with a pinch of salt and cook for 20–25 minutes, stirring occasionally, until deeply golden and caramelized.

Step 2: Brine and Sear the Eggplant
