For the Noodles
- 8 ounces soba noodles
- Water for boiling
For the Stir-Fry
- 1 tablespoon neutral oil
- 1 small yellow onion thinly sliced
- 3 cloves garlic minced
- 1 tablespoon fresh ginger minced or grated
- 8 ounces Beyond Steak
- 1 cup green peas fresh or frozen
- 3 cups fresh spinach
For the Sesame Soy Sauce
- 3 tablespoons soy sauce
- 1½ tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 1 teaspoon maple syrup or sugar optional
- 1 –2 tablespoons water as needed
- Chili flakes or chili crisp optional
For Garnishing
- 2 scallions thinly sliced
- 1 tablespoon sesame seeds
- Lime wedges optional
For the Seasoning Spice Mixture
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon ground black pepper
- ½ teaspoon chili flakes optional
- ½ teaspoon five-spice powder or your favorite all-purpose seasoning optional
Prep the aromatics
Slice the onion, mince the garlic and grate or mince the ginger. In a small bowl, mix the soy sauce, rice vinegar, sesame oil and optional maple syrup. Preparing the sauce before cooking makes the stir-fry easier to assemble because everything comes together quickly once the pan is hot.
Cook the soba noodles
Bring a pot of water to a boil and cook the soba noodles according to the package directions. Drain and rinse briefly under cool water to remove excess surface starch and help prevent sticking. Drain thoroughly. If you're not adding them to the pan immediately, toss them with a small amount of neutral oil.
Add Beyond Steak and vegetables
Add the Beyond Steak and cook according to its package directions, allowing the pieces to brown where possible. Stir in the peas and cook until heated through. Add the spinach and toss until just wilted. If the pan seems dry, add a small splash of water to help the vegetables cook without scorching.
Toss everything with the sauce
Add the cooked soba noodles to the skillet, pour in the soy-vinegar mixture and toss everything together until the noodles are coated. Add a splash of water if needed to loosen the sauce. Taste and adjust with more soy sauce for saltiness, vinegar for tang or sesame oil for nuttiness.
