Ingredients for Baingan Bharta

  • 1 large eggplant
  • 2 tablespoons olive oil divided
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 medium tomatoes finely chopped
  • 1 teaspoon garam masala
  • ¾ teaspoon salt or to taste

Instructions
 

Roast the Eggplant

  • Roast the whole eggplant until the skin is deeply charred and the flesh is completely soft. Let it cool slightly, then peel off the skin and mash the flesh.

Sauté the Onion

  • Heat olive oil in a pan over medium heat. Add the chopped onion and cook until soft and lightly golden.

Bloom the Aromatics and Spices

  • Stir in the garlic and ginger. Add the garam masala and cook briefly, allowing the spices to bloom in the warm oil and release their aroma.

Cook the Tomatoes

  • Add the chopped tomatoes and salt. Cook until the tomatoes break down and the mixture thickens into a rich, saucy base.

Combine and Finish

  • Add the mashed roasted eggplant to the pan. Stir well and cook for a few minutes until everything is fully combined and heated through.
