Ingredients
  

  • 2 cups cooked rice day-old works best for fried rice
  • 1 cup cooked potatoes diced (leftover roasted, boiled, or pan-fried)
  • 3 –4 strips vegan bacon diced (such as Thrilling Foods Bakon™)
  • 2 scallions thinly sliced (whites and greens separated)
  • 2 cloves garlic minced
  • ½ medium onion diced
  • 1 –2 tablespoons soy sauce or tamari to taste
  • 1 tablespoon oil neutral or sesame oil for flavor
  • ½ teaspoon smoked paprika optional, for extra smokiness
  • Salt and black pepper to taste
  • Chili flakes or hot sauce optional, for heat

Instructions
 

  • Cook the vegan bacon in a skillet until crisp, then set aside.
  • Sauté onion and garlic in the same pan until fragrant.
  • Add potatoes and cook until golden and slightly crispy.
  • Stir in rice, breaking up clumps, and season with soy sauce, salt, pepper, and optional spices.
  • Return bacon & finish with scallions, tossing everything together before serving hot.
