2 cups cooked rice day-old works best for fried rice 1 cup cooked potatoes diced (leftover roasted, boiled, or pan-fried) 3 –4 strips vegan bacon diced (such as Thrilling Foods Bakon™) 2 scallions thinly sliced (whites and greens separated) 2 cloves garlic minced ½ medium onion diced 1 –2 tablespoons soy sauce or tamari to taste 1 tablespoon oil neutral or sesame oil for flavor ½ teaspoon smoked paprika optional, for extra smokiness Salt and black pepper to taste Chili flakes or hot sauce optional, for heat
Cook the vegan bacon in a skillet until crisp, then set aside.
