For the Salad 1 pack vegan patty nutcase vegan 4 cups mixed baby greens 1 cup cherry tomatoes halved 1 medium zucchini sliced into half-moons 6 oz silken tofu gently cubed or spooned 1 tablespoon olive oil plus more for cooking 1 –2 teaspoon balsamic vinegar ½ teaspoon coconut sugar 1 tablespoon chopped dill 1 tablespoon chopped cilantro Salt and pepper to taste For the Dressing 2 tablespoon vegan yogurt 1 –2 tablespoon plant milk oat or almond works best 1 tablespoon nutritional yeast 1 teaspoon soy sauce ½ teaspoon sesame oil ½ teaspoon mustard Pinch of salt and pepper For the Topping ¼ cup toasted panko 1 tablespoon nutritional yeast
